Sardine Corn Cakes - Recipe

Here's a really simple, but delicious recipe for corn-based fishcakes, with flavours inspired by tapas I enjoyed on trips to southern Spain.
If you don't like sardines, you could substitute some pieces of chorizo, cooked chicken or shrimp

    Whenever I'm in a bad place I just binge watch this man. There's a calming notion to not just his voice (I'm not weird I promise) but his ability to be in touch with reality and his care with everything he does. Really refreshing. Love the foraging videos and all the cooking videos and just how diverse he is as a content creator. Everything is kept simple. No flashy editing. I'm a massive fan, Mr Atomic Shrimp. I don't think I'm the only person his videos help either.

    Make an x cut on bottom of tomatoes before blanch. Makes skin slip right off....

    Brilliant. I used to make corn cakes with salted cod (Bacalao). However, I would add baking powder to leaven the corn flour and make them just a little less dense. I will be making these as a breakfast tomorrow morning. I have a large can of sardines in tomato sauce, and will feed at least four. My daughter will take the leftovers to share with her workmates (if they pass muster). I'm going to add some garlic and parsley, as well. Again, brilliant. I have a tough time finding salt cod these days!

    Thanks for telling us that you enjoyed them as well. Now I am definitly going to make them... Aaaas soon as I can find sardines in my tiny, isolated hometown. Probably going to need to order some online.

    Didn't have bacon or sardines, went with some fatty ham and canned salmon. Definitely denser and different but still delicious. Made a roasted tomatillo salsa verde and knocked it out of the park. Great recipe, thanks for the inspiration and I can't wait to try it the proper way next time.

    if you roll a lemon on its side squeezing it as you roll it will release double the juice, works on pretty much all citrus fruits. limes from pakistan (little balls which taste somewhere between a lemon and a lime) make amazing salsas and vinaigrettes too, well worth looking out for

    This looks delicious! My mom makes salmon patties with canned salmon and crackers. This is just different enough to peak my interest.

    Would you be able to do the stuffed crust pizza one again? I've tried it with leftover meatballs and sauce stuffed crust, try doing that. Going to definately try this recipe though.

    Sardines are one of the great delicacies of life, as well as tinned kippers, smoked oysters and mussels. Open the cans, squirt a bit of lemon, and eat. ambrosia.

    I agree with taking the spines out. I find It gives the sardines a slightly chalky or gritty texture.

    you coud flower the Spines and shallow fry them For crunchy a Crunchy topping

    This looks good. Please tell me, is that sort of red pepper hot like a Chilli Pepper or like a normal red pepper? My insides are a bit sensitive. I cannot have onion but can add a little Garlic infused oil & lots of Parsley instead. Your recipe looks yummy to me. Thankyou for showing us. I used to make tuna fish cakes with sweetcorn & All Bran cereal, sounds a bit odd I know but actually they were very good.

    Hmmm - I would probably use cracker crumbs or something - I think regular wheat flour would just make weird bouncy dumplings

    What a good idea. You could do the same with a tin of pilchards too. They have more meat on them than sardines. Cheap and healthy; what more could you want?

    They are interchangeably the same thing, just bigger (the names overlap continuously throughout the world). I think that there was a marketing effort in the UK to rename local pilchards to sardines at one point because the "pilchard" name isn't as sellable.

    If you put bacon into a cold pan and then turn the heat on, fat renders out of the bacon and then you could throw everything else in

    My wife makes these but without the red pepper (which she detests), the bacon or the toe-mar-toes. She uses mackerel and calls them "salmon patties." :)

    I just scrub the board in bleach and dish suds in hot water. Then I wash it again in clean soapy water. Scrub and wash and sanitize, and you'll be fine. If there's deep cuts in the board, of course I wouldn't do this, bit scrubbing with a kitchen scrubber in bleach water should be fine.
