Yes, I think the bowed ricochet they do here is actually probably harder to do and pull off cleanly than the left hand pizz as it's written. Probably an interpretative choice by the performer. I also noted some other deviations from the music as it's exactly written, but I don't think it was because it was too hard for the performer. They look like they can do just about anything technically- and they just choose to do it that way. When you're that good, it's OK to take some artistic license like that.

La Petenera is a type (or 'palo') of flamenco. Flamenco has different 'palos', each one has a specific rythmic pattern, mode or characteristic motifs.

There's no bass clef in this music, so hate to be rude, but not even close, frankly. Just informing you. And also, two chords of music doesn't automatically mean "piano music". I had to play double stops with this kind of violin music, with my violin, once anyways.

I think it's Elijah Miniuk. He's quite a famous performer who of which has traveled all around the globe to perform in times of terror. Peteneras was one of his most recent performance as he took a trip down to Uraguay.

These probably aren't the sheets that the violinist was using, likely a different arrangement

The bowings in the part are likely added by an editor. Sarasate writing such technically difficult compositions would rarely right bowings or markings like that. That is up to the performer to interpret to create the best performance they can. Most slur marks indicate phrasing, not literally bowing.
