@@messiahcomplex1 What do you mean? Tandır / tandoor is just the cylindrical oven. You could cook all sorts of things in it. These are usually for presentation purposes at restuarants. We don't haul cauldrons and brew potions on the daily. Although I gotta admit for special occasions, we do like to make shit in huge melting pots.

As a Turkish, I can confirm that we don't put cheese on everything as smile bae did. But that doesn't mean that we don't eat or put cheese on foods. It just doesn't like in the video. We have a wide variety of cheese types. Putting cheese is somehow very entertaining for foreigners and that's why he does it that way

That style of cooking originated in the desert , nomads would need to cook their food on the road & travel light. the sand//salt insulates heat& locks in moisture. it cooks for hours until all the hear has died down. now ppl just salt pack food and put it in a traditional oven to get the same effect. cooking in giant portions is also very traditional cuz those types of meals were ceremonial & meant for an entire tribe of ppl. it was common to cook the whole animal back then so the huge portions were originally meant to accommodate an entire goat, now ppl can just use prime cuts of meat in the same traditional cooking ware. Also u shud just invest in a pressure cooker! thats a simple way to get tender jiggly meat. xo

I come form a mountain area in Lebanon, we make goat cheese that stays in goat skins for months in winter, they add a lot of salt to it so it doesn't rot, it's generally the same concept of fermenting the cheese and people pay big bucks to get their hands on this cheese, there is even a waiting list and just a few people can manage to buy it as their aren't many producers, and believe it or not it tastes really really good.

They don't have such gourmet food culture in the U.S. They generally use frozen or canned food at their restaurants and the ones with high quality food charge a lot so it is normal they find those type of cheese unappealing.

glad im not the only one being led into this timeless loop of turkish cooking
i dined at CZN buraks restaurant (Medeniyetler Sofrasi) before i knew he was famous and tried the stuffed lamb intestines/sausages, and meat with cheese, it wasnt bad at all, people go there for the fire theatrics with the salt dome chicken which its known for. Ive been to Salt Bae's Nusret resto, they really specialize in steaks, btw hes a butcher not a chef, you need reservations and book ahead too since its always full. Their main restos are located in Etiler, the posh business area of Istanbul but they have smaller restos all around, Nusret is also near Sultanahmet and CznBurak is in Istiklal st, Taksim.

(if my government does not mess things up to bad) I still brag to my friends how great it was but our media portrays every Muslim Country as the enemy to keep the war machine going.

When I lived in Turkey my favorite food was pizza🍕. Also the apple tea they serve at shops was amazing. Not apple cinnamon, but apple. Haven't been able to find Apple tea in the US for 25 years, but found it on Amazon last year🍏🍎
