素食酥皮红豆沙月饼,柔软的酥皮制作私藏食谱分享
酥皮月饼,开酥非常简单。不用月饼模具,不用枧水,不用转化糖浆,也可以做出千层酥皮的中秋月饼。
这是我为自己吃素的妈妈设计的食谱,不用动物油,包酥的方法非常简单,酥皮月饼层次丰富,并且我采用了半烫面的独特方法,让月饼的酥皮非常柔软,吃起来味道和口感都非常好。

食谱:
12个月饼
水油皮:
中筋面粉200克
食用油60克
*(玉米油,向日葵油,或其他味道清淡的油)
白糖30克
沸水50克
常温水40克
油酥:
低筋面粉180克
*(中筋面粉也可)
食用油90克
馅:
红豆沙 30~35克*12个
(360~420克)
烘烤温度:160°C
烤箱中下层,或下层
40分钟
*请根据自家烤箱的功率调整烘焙温度与烘焙时间。
制作过程Tips:
1、水油面团先混合好,揉3分钟,让面团基本光滑。松弛20分钟。
*(这个空档就可以用来制作油酥,油和面粉混合好密封备用)
2、水油面团第二次揉2分钟,就会变很光滑。面团揉光滑后,将会形成韧性的膜来包裹油酥,从而让月饼酥皮达到非常好的层次。
3、揉好后再松弛30分钟后,再来包油酥制作酥皮。这样松弛后面团将非常容易擀开。
*(这个空档就可以用来把红豆沙馅称量好,搓圆,冷藏备用)
Vegetarian Pastry Moon Cake With Red Bean Paste Filling, Soft Pastry, Private Recipe Sharing
Pastry moon cake, the pastry is easy to make. You still can make moon cakes without using the moon cake mold, alkaline water and syrup: they are unnecessary here.
I designed this recipe for my mom, who is a vegetarian. There is no animal oil involved, and the way of makng the pastry is very easy. The pastry moon cake have a lot layers, and I used the method of pouring the warm water (mixed with half of boil water ) for mixing process in order to form gelatinization, which is very unique. It will make the pastry very soft and taste good.

Recipe :
12 moon cakes
PASTRY DOUGHS:
All purpose flour 200g
Cooking oil 60g
*(corn oil ,or sunflower oil ,or any Light-tasted cooking oil)
Sugar 30 g
Boiled Water 50 g
Water 40g (room temperature)
Oil dough :
Cake flour 180g
*(or all purpose flour)
Cooking oil 90g
Filling :
Red bean paste 30~35 g*for 12 pieces
(360~420g)
Baking temperature :160°C (320°F)
40 minutes
*Adjust the temperature and duration according to the power of your own oven.
Middle or Lower-middle rack of oven.
PROCESS & TIPS:
1、Mix the pastry dough first, knead for 3mins, let the dough be smooth on its surface. Relax for 20mins.
*(you can make oil dough in this 20mins gap, mix the oil and flour together, seal for later use)
2、In the second kneading, party dough will becomes smooth after 2mins. After it becomes soft, later it will becomes a thin and flexible membrane that cover on the oil dough, so you can see many layers on pastry moon cakes later on.
3、After you done with the kneading, relax for 30mins, then cover the oil dough, because the relaxed dough will be easy to roll into a sheet.
*(In this gap of 30mins, you can measure the weight of the red bean paste, make them to balls, put in refrigerator for later use.)

    怎么知道烤熟了?大概多长时间?

    🥰💖你好,烤熟我用的時間是160攝氏度烤箱中下層40分鐘,每家烤箱脾氣不同,請結合自家烤箱適當調整。具體判斷標準還可以看看底部是否上色,側面是否開始微微發黃,還有一點點膨脹。
