অপূর্ব। আমি এই রান্নাটি বেলা দে মহালয়ার "গৃহিণী'র অভিধান " বই থেকে শিখেছি‌ । মামাত বোনের বিয়েতে খেয়ে এত ভালো লেগেছিল যে বাড়ি এসেই বেলা দে খুলে বসেছিলাম। পেয়েও গেলাম সঙ্গে সঙ্গে। তখন তো, এত ইউ টিউব ছিল না। অন্তত আমার ছিল না। যাইহোক, সেখানে দেখেছি, বেলা দে এই রান্না য় পেঁয়াজ, রসুন, আদার রস ব্যাবহার করতে বলেছেন‌ কুচোনো বা বাটা নয়। আর ঐ ভাবেই আমি করি । রুই মাছ দিয়ে এখনও করি নি ‌ । যতবার ই করেছি, ততবার ই কাতলা মাছের বড় বড় পেটির মাছ দিয়ে করেছি।সেটাও বলা আছে গৃহিণী র অভিধানে। আর আমি বিয়েবাড়িতে ও পেটির মাছ দিয়েই খেয়েছিলাম। তাই সাধারণত দমপোক্ত করলে কাতলা পেটি দিয়েই করি। খুব ভালো হয়। তবে এই রান্নাটি যে আসলে কৃষ্ননগর রাজবাড়ি র রান্না, তা জানতাম না অবশ্য। জেনে খুব ভালো লাগলো।

শুভ বিজয়া। অনেক ধন্যবাদ। ভালো লাগলে ভিডিওগুলি আত্মীয় বন্ধুদের সাথে শেয়ার করবেন। খুব আনন্দ পাবো। কেবলমাত্র এই জন্যে নয় যে আমাদের ভিডিওগুলি আরও অনেকে দেখবেন ও আমরা আরও বেশি প্রচার পাবো। তার চেয়ে অনেক বড় কারণ হলো এই যে এ রান্নাগুলি বাঁচিয়ে রাখবার এটিই একমাত্র উপায়। সে পথে আমাদের সঙ্গী হোন, এই অনুরোধ রাখি। 🙏🏻🙏🏻🙏🏻

দাদা, আপনার দেখানো পদ্ধতি পুরোপুরি অনুসরণ করেই আজ করে খেলাম, খাওয়ালাম কাতলার দমপোক্ত। অসাধারণ হয়েছিলো। আবার রাত্রেও খাব। Report ও খুব ভালো। বাবা, ছেলে দুজনেই খুব প্রশংসা করেছে। অবশ্য ই বাজারসরকার কে আমিও প্রশংসা করেছি। কারণ মাছটাও একদম বিয়েবাড়ি র মতো দারুন quality র ছিলো। একদম পাকা মাছ। তাই এই রান্নাটা এত ভালো খুলেছে। এরকম আরও আরও পদ শেখান এইরকম ই মাছের নানারকম।আর তার সাথে আপনার অপূর্ব গল্প বলা, প্রতিটি ভিডিওকে দেয় অন্য মাত্রা। আচ্ছা দাদা, কলকাতায় আপনার রেস্টুরেন্ট টা কোথায় ? আর তার নাম ই বা কী ? একদিন খেতে যাব তাহলে।

I suggest you fry it after rubbing salt and coating it in flour to keep it intact. Fry for a bit longer so that the outside surface remains firmer. Then pour in the gravy and let the t cook for a bit shorter time. Please let me know how it turns out to be. 🙏🏻

আবার একটি অভিনব রান্না।সেই সঙ্গে দৃষ্টিনন্দন উপস্থাপনা। এবার একটি বিনীত প্রশ্ন। সাধারণত আপনি সাদা তেলই ব্যবহার করে থাকেন লক্ষ্য করেছি।পুরোনো দিনে এই রান্নাগুলিতে cooking medium কি ছিল জানতে কৌতুহল হচ্ছে।

না না আমি খুব সর্ষের তেলও ব্যবহার করি। বিশেষ করে বাঙালী রান্নায়। খেয়াল করে দেখবেন, ভিডিয়োটিতেও বলেছি, এই রান্নাটি কিন্তু পুরোটাই ঘি তে হতো। এটিকে বিশেষ করে সাদা তেল দিলাম পুরোটা ঘিয়ের বদলে।

Thank you for sharing this nice recipe. I have a request to you, will it be possible to share the recipe of a sweet dish called ‘Ichamura’. My great grandmother used to make this dish, specially in Dashami. No one knows in my family, also I didn’t able to find the authentic one in KZread or any where else. But I used to love that sweet and longing for long time to be able to make one. As you are finding and recreating for the lost recipes, it would be very nice if you can help me to find this one too.

How is this Dumpukth? Dumpukth cooking is a separate cooking technique. Just thought of sharing please do not take offence.

Here they have not sealed the cooking vessel but covered it and cooked on slow fire which is actually the process of cooking in dum just apart from sealing the lid with dough. I have followed the process as explained by Renuka Devi Chaudhurani. Dum Pukht in its original form is usually for meats and lentils. one thing we must understand is that if fish is cooked in the same process, it will melt completely and the pieces will not be identifiable. And again, as I have mentioned repeatedly in so many videos in this series, I really think that the cooks of the Nadia Rajbari took names of dishes from several regions like Kashmir, Konkan, Awadh, Mughals, Europe, Far East and of course Bengali, took the main ingredients from the original recipe and came up with their indigenous dishes. So we have to depend on contemporary books where we find dishes by the same name and demonstrate those, as we will never really come to know the exact recipes of the dishes cooked that day. Hence followed this recipe as shown by the legendary Renuka Devi. I hope I have been able to answer to your query. Please be with us.
