Royal Icing Consistencies (How to flood and outline a cookie)

Hi Everyone,
Here are the basic consistencies you will use to outline and flood your cookies. Using the royal icing recipe from my previous video, I thin down the icing using small amounts of water at a time. In the video I use a dropper to show you that you do not need too much water to change the icing consistency. You can use a teaspoon or a spray bottle as well, whatever works for you!

I like to use 2 consistencies, the first is a thicker one to outline my cookie. This way it keeps the icing from flowing over the edge of the cookie, gives you nice sharp corners and makes the icing have that nice puffy look. This outline icing can also be used to make details on your cookie.
The second consistency is the flood icing. Flood means to fill the cookie with icing. I like my icing to be on the looser side, so that it settles on it´s own and don´t have to jiggle it to get it smoothe. It gives you that nice even finished look.
Always remember, if your icing is too thick, take it out of the piping bag and add more water. If it´s too thin, add more powedered sugar. The more you practice the more you will learn what consistency works best for you.

    If you have a fan blowing then about 45 minutes otherwise air drying takes couple hours! To fully dry the icing you need to leave the on the counter uncovered overnight!

    Thank you! I would say about 3 dozen on average. It really depends how big your cookies are though, if they're quite large then it will be less if they're a bit smaller than more!

    Your videos are great! Wondering if consistency is key to not having cratering on my cookies. I think I make it too thin. I notice it on small and large flooded areas, but not on every cookie!

    Thicker icing definitely helps prevent it but not always! It mostly happens in small or narrow areas and there's a few things you can do to try and avoid them I have a video here explaining different ways kzread.info/dash/bejne/gGuG0ZqMfrK1nbg.html

    I haven't done super small cookies, but I almost always outline and flood. I find it hard to get the consistency just right if I don't! So having an outline helps in case my flood isn't perfect!

    I always like to give it a stir with a spoon. Or if they're already in piping bags, I just massage the bag a bit!

    thanks so much for the video! it's short and to the point. I'm wondering: can you do a small batch of outlining (say 6-8 cookies) and then do the flooding all together? Or do you really need to fill the borders right away to look perfect?

    Thats actually the way I do my cookies. I outline all of the ones I need to flood, and then go back and flood. I prefer it this way, makes it go faster and I actually like my outline to dry a but before I flood so that it holds the shape better!

    Yes I find it works the best! I have a dehydrator so let's say I have 3 dozen to do ill outline it all, then flood and after each flood I stick it in the the dehydrator, so once I get done all 36 cookies the first cookie I put in is usually ready to have the next steps done. Makes it feel like your not wasting so much time!

    I loved that, I am a bignner and I notice that after while small pieces in my royal icing inside the piping bags.That's horrible 😞 so the r.i will not come out. I hope you understand what I'm saying. By the way, I read your comment about put a wet towel to prevent dry royal icing so do u think this is reason ? Or it could be I am using powdered sugar instead of icing sugar?! My royal icing when it comes out from mixer is very good 👍,then I have this problem.

    It could be that the icing on your tip is drying out. And yes I always use wet paper towels because while you working on the cookie the icing dries in the bag if it is exposed to air so that could be where its getting clogged. Especially when using bigger tips or holes in the bag, it dries faster. For me powdered sugar and icing sugar is the same where I live, but it could be that your sugar is not super fine and I know different brands are not as good sometimes. You can sift your powdered sugar to see if there are chunks left or maybe try a different brand too!

    Thanks! I squish my tips of the bags between damp paper towels when I don't use them. So I have a paper towel on the table and put the tip near the middle and fold it over and squish the tip down if it's my flood.

    I am wondering what size of bags you use for decorating the cookies ... I live in Northern Ontario, Canada, and supplies here are minimal, so I will have to order them in. I assume that you would use the smallest, and I am wondering if 10" is the smallest?

    I like to use the biggest ones I can find (usually 10 inch for the Cake Mama Bags) but if I can get 12 inch I do. I like having extra room to tie my bags at the top and if I I'm doing a lot of cookies I'll fill it as much as possible. For my videos I usually cut the excess off of the top of the bag so it doesn't get in the way of the camera, so they look smaller than they are!

    My question is when the cookies are drying how do you use the dehydrator to dry them I understand the concept but I'm wondering what settings or what kind you use I haven't ever done that before so I'm just wondering when we are trying to get it to dry a little faster what settings or how do we use the dehydrator?

    I have one that I can set the temperature to and I try to keep it between 85 and 90°F. Once I flood, I'll stick it in there for about 20-30 minutes or until I can se the icing has started to dry on top and then I can move onto the next layer! If you don't have one you can also use a fan, which helps dry them faster than just air drying!

    Aww thank you so much 🥰 I would say about a size 2 or so! I always cut a small hole and test it on a paper towel. If I find its too small when I pipe it on my cookie then I cut it bigger if needed! Always better to cut small and cut bigger than too big and having to re bag the icing.

    Thank you for this video! One question please, do you have a video that guides through the second+ layers of decorating icing consistencies? In other words an example, after you flood the cookie, let it dry for 30 minutes (or how long in a dehydrator?) and want to pipe and flood the second layer as a flower and leaf design, what icing consistency do you use to prevent craters or holes, for the flood? Please help and thank you in advance! Love all that you do!

    How do you keep from seeing the border lines? When my cookies dry there is a visual difference between the line and the flood. Not the colors just a slight separation.

    I need to practice more on my outline consistency and learning consistency. Wonder what icing recipe you use mine is just 2 pound powdered sugar 5 tablespoons of meringue powder 1/2 to 3/4 cups of water 3 teaspoon vanilla

    I do have a video and recipe for my icing, the recipe is in the description! Consistency is one of the hardest learning curves but once you find what you like and works for you it gets much easier! Lots of practice and it will come!

    Little Cookie Co I noticed that you put your icing in bags. without the tip does it dry out in your bags. i was using sweet sugar bell icing recipe and her bags with number 2 tip for outline and 3 tip for flooding.

    While I'm working on my cookies I put the tips of my bags in between some wet paper towel (not soaking wet but enough to stay damp) so the tips don't dry. After I'm done I squish the tip and fold it up and then put them in a zip lock bag and use the next day or freeze if I'm done my set. Royal icing will crust or dry if it's exposed to air so just try to minimize that.

    Little Cookie Co somebody in another video said to take a damp paper towel and put it in a glass cup as you’re icing your cookies so your icing doesn’t dry out put your bags in the cup while you’re icing bunch of cookies. But you don’t use Tips so my question is if I didn’t use the tips can I lay the icing bag flat or do you put yours in a cup if you’re doing a bunch of cookies. I want to try using without a tip just to try. I’m going to start icing more cookies within an hour. Your cookies are so beautiful and you are so talented

    I love tipless, a lot less clean up and easy to make thicker or thinner holes instead of changing tips! I lay my bags sideways because if they're upright then my icing leaks out. So I take a damp paper towel, have it on my counter then lay my bag so the bottom part near the tip is at the middle of the paper towel and I fold half the paper towel on top (so keeps the ends from drying out) If my icing is really loose and still seeping out of the bag then I just push down the tip to flatten in so the end of the bag is flat if that makes sense.     Thank you! I'm not really sure what can be substituted, but you can leave it out! Royal icing is actually made without it but we like to add it here in North America! But it will work just as good without it if you can't find something similar there 😊

    i looked it up on line because I have several cookbooks from the Uk. I think the best subitute is called Golden syrup . hope that helps.

    Hi...my Icing doesn't come out smooth on the cookies like ther Y have some bumps...but at yhe same time if more water is added then it doesn't dry out completely even after leaving them out overnight

    The bumps could be bubbles or could he from your meringue powder (I've had gritty meringue powder before). You have to shake the cookie or run a scribe to smoothe it out if it's too thick and even if you add more water it should dry.. could be your recipe too? Have you tried my recipe?     It depends, air drying can take up to a few hours. If you put a fan to blow on the, about an hour. Then once done, leave them on the counter overnight for abou 8 hours and they will be full dry!

    If you use flood for outline too then you'd have to have a thicker flood or it may run off your cookie.

    You will normally always see it from the side, but if you flood half on top of your outline it's a great way to hide it!

    I don't like to leave it out on the counter more than 5 days or so as it separates and has to be remixed. But it can be frozen for up to 6 months!

    I’m new at all of this.. so may be a silly question. Do you use the same bag for outlining and flooding? Or is it two different bags since one is a smaller hole and the other is bigger?

    Do you mean icing sugar? We don't really have many brands here I mostly only see one at the store called Roger's so that's what I buy! Have never tried anything else

    Sorry I think I missed this one. I usually let it dry for a few minutes before a flood, it doesn't take long since it's thicker icing. If I'm doing a set, then I'll outline all the ones with the same design then go back and flood and by that time it's dry enough!

    Yes for sure! Your looking for about 20 seconds consistency, where if you run a knife through your icing it takes about 20 seconds to melt back into itself

    It's really hard to say, I never measure, I just add a few drops at a time and then would count, and repeat until I get it right. A little bit of water goes a long way so even adding a teaspoon at a time may be too much. Sometimes you just need a couple of drops

    You don't need too much pressure because it's more liquid it comes out much easier. If you have to put a lot of pressure then your hole is probably too small for flooding.

    If they are really small I would make it like my outline consistency, it's easier to do small details!

    Is the hole bigger in the piping bag with the flood icing? Or does it come out like that because it's thinner?

    It's slightly bigger in the flood icing but it also comes out like that because it's thinner icing and flows faster and without pressure. If I'm doing big cookies I'll cut the hole bigger and if I'm doing small cookies I'll cut it smaller so I have more control!

    Hello again I made royal icing today with meringue powder and it came out grainy I don't think I've ever experienced this is there any way to save it?

    It may be the meringue powder you are using. I bought one once from CK and it was grainy. Still worked ok but I stopped using it after I realized it was because of the meringue powder

    @@LittleCookieCo I ended up adding a little more hot water then a little powdered sugar and also meringue powder the mix the meringue powder with hot water and dissolved it first so I was able to save it thank you so much 🥰

    It depends how you dry it, I use a food dehydrator to dry them, it takes about 20 minutes for me to move onto the next step but not fully dry. You can also use a fan next to your cookies, that takes a bit longer, or air dry, which takes the longest (a couple hours or more). It depends how humid your area is and things like that as well. To fully dry the icing I always leave them overnight on the counter and make sure not to cover them!

    1kg de azúcar pulverizada/impalpable 45 gramos polvo de merengue 115 a 170 gramos de agua 85 gramos jarabe de maíz 15 gramos (una cuchara) de vanilla Color blanco Mezcla los primeros 3 ingredientes y después pon el resto. Si quieres más espeso, pon menos agua y más liquido pon más agua.

    You can practice on any cookie if you don't want to make them 😊 you can buy them from the store and turn them upside down so they are flat. Or you can practice on parchment paper too

    I think if you are listening with headphones/speakers the voice only comes from one side and the music the other. So if one speaker or headphone doesnt work properly it could be the side my voice is on. Try it on another device if you can and hopefully you can hear me speak 😊 I'm working on trying to fix that.
