What a glorious time of the year when pumpkins are readily available. So many culinary possibilities with this marvelous gift from nature. Delicious when roasted, but also mouthwatering when served as a creamed soup, incorporated in a risotto or pasta dish, and even transformed into a stunning dessert. Today our pumpkins will be sliced into wedges, seasoned to perfection with fresh herbs and spices and roasted in our wood-fired oven. Let's get started!

    Mmm yes please. I love roasted / baked pumpkin. It's a staple for us Aussies when having a roast dinner. I prefer to leave the skin on to eat, it has a unique flavour. Any leftovers are used to have on toast or to make bubble and squeak. Yes the seeds cleaned and slow roasted or dehydrated are highly nutritious and delicious salted. 🤤😀👍🇦🇺

    @@rehaboth203 No, not used the dehydration function on the airfryer. I use a dedicated food dehydrator.

    Mum never did any fancy cooking but we always had hearty meals - meat with 2 vegs, the Aussie staple. Roast lamb with baked potatoes and pumpkin every Sunday and for a special occasion some green peas.

    I love how you say an actual pumpkin for eating not just for carving and throwing away. here we only eat our pumpkins, or did until that silly imported halloween thing started up. pumpkins are great and tasty enjoy

    I just made this recipe to go with a pork shoulder I cooked all day. This is absolutely my new fav pumpkin recipe! Sooo good! I did dial back the seasoning just a little since we have a toddler in the house… but he loves it too. 👍 Now, if I just had one of those amazing ovens! ❤

    @@rehaboth203 - I had it on moderate, at 180 degrees Celsius. 325 degrees Fahrenheit…

    @@rehaboth203 - I usually bake them for about 40 mins @ 180degreesC (325F). Enjoy. They’re also divine cold, with other roast vegies, feta cheese and chicken

    190C for soft and soggy (to be used for puree or soup). 220C for caramelized outer part. At least those values worked for me.

    Place the baking sheet into the preheated oven and bake for about 30-35 minutes. If the oven is a bit too hot, or the fire happens to be too active, simply cover the pumpkins loosely with foil for the first 10-15 minutes. The slices can also be flipped when nicely caramelized on one side.

    Hi! Very nice video very relaxing to watch/listen to , and looks delicious ! and i just harvested a few pumpkins from our garden.... Would you tell us what temperature to set the oven to for baking? Altho... i see that you are using a great wood-burning oven, so maybe you can't advise me on what to set the regular oven at(?).

    Great video, but I have one (2) problem. How hot is the oven, and how long did you cook it? Like, everything else is mentioned in this video accept the two most important pieces of information. I legit clicked on this video because it was the longest video when I searched "how to cook roast pumpkin". I figured the longest video would have the most amount of information. A lot of info to be sure, accept the main reason I needed to research--I need to know how hot and how long. I mean, I now know if it it "too hot" to cover with foil, but how hot is that?

    I have just tried making this, mine is just waste as usual, straight into the trash. I must have used the wrong veg, my spices were awful too, everything a waste of effort and electric! We need oven temp and duration. My squash was a green thing, all white inside and no real seeds to speak of although they did seem to be a part of the centre. Maybe it was too young. Anyway

    You're perhaps right on both counts. An immature pumpkin will be a light green with white flesh and quite flavorless, or it could've been a hybrid. Did you grow it yourself? Sometimes if you're growing multiple pumpkin varieties in the same garden they hybridize and create odd results.
