love this idea. Most of the time I use the leftover Veg in wraps or mashed on butter toast or put them into soups. Just think if you have guests and only leftover veg and a little roast you can in the time it needs to make so fast flatbreads make this hummus and crips up the little bits and pieces of meat. This together with some saladleafs and crunchy Veg would make a Feast! Nobody would notice that you serve leftovers or of the notice they would understand the magic of this. Thank you for sharing.

Also, one dish my daughter love with left over roast root veg is breakfast hash. I saute then fry some onions in some olive oil, and the chopped up root veg and a leftover cooked sausage or two and get a bit of colour and crisp on them. I serve on some toasted pain au levain (which I make) and a poached egg on top seasoned with salt, pepper and tabasco. Get in!

Maybe could find tahini paste in Mombasa, but don't go there very often. I just take simsim and grind it in a spice mill.

Nice recipe Hugh! I don't like to moan, but I think you need a proper microphone as it sounds very tinny and echoey. Cheers.
