River Cottage Lockdown Kitchen: Bubble & Squeak
Executive Head Chef Gelf Alderson is in the Lockdown Kitchen - which in this case is actually the River Cottage farmhouse kitchen as he is lucky enough to live within walking distance - and is cooking up Bubble & Squeak. This British classic is given a seasonal twist with the addition of Stinging Nettles and served with a poached egg, together they elevate this leftovers dish to something a little bit special.

I have been a fan of Hugh from the get go, So glad he's doing lock down recipes
What is SO difficult about getting bubble & squeak right? It is a peasant dish made from potato, cabbage, salt & pepper, and then fried in some form of animal fat (or neutral oil if that's all you have). No cheese, definitely no olive oil, no nettles, no bacon, no chorizo, no wagu beef, no frankincense or myrrh.

"One egg per person" (shows three eggs)..... .....Makes four patties.... ....poaches two eggs..... Yep, Tommy Cooper school of Magic. Erm, nettles ? Cheese ? Yes, just like Granny never made it.

Terrible poached egg! I love River Cottage! What a car crash! 80C degrees for a lovely soft egg! Not a squash ball please.
This is not a bubble and squeak.
This is left over food not gourmet.
