RICE VERMICELLI SALAD | Fresh and Easy

This is a delicious and refreshing Vermicelli Noodle Salad that is quick to make and super healthy.
Ingredients:
400g chicken breast
200g rice vermicelli
2 red pepper
2 red chili
2 cucumber
1 large tomato
2 pickles
3 garlic gloves
2 tsp red chili powder
1 tsp sesame seeds
bunch of herbs (dill & coriander)
50ml soy sauce
salt
olive oil
Instructions:
1. Soften the vermicelli noodles in a large bowl by covering with boiling water and soaking for 3-4 minutes or until tender. Rinse under cold water, drain, and add to a large bowl. Set aside.
2. Add olive oil into a pan. Fry the chicken breast for 2-3 minutes, then add all the ingredients (e.g. finely chopped vegetables) one by one, add salt, chili powder, sesame seeds and soy sauce. Stir well until the ingredients are tender.
3. Add the soaked rice vermicelli into the pan and mix well. Serve
