My family makes zucchini soup , it's so good. Half zucchini, half potato's, onion, salt pepper and a little cream or water. Cream of zucchini soup, yum❤

We call that vegetable "amaranth" a different name here in Jamaica. We call it "callaoo" ,we make green juice with it and we cook it or steam it the very same way that we cook most of our vegetables here. It taste excellent with fried carrots and seasoned with chilli pepper, onion, bell peppers, garlic and tomatoes . Sautee all the other ingridients first and then add the callaoo and fried carrots, very tasty dish.

My garden is slow here in Michigan we have had weird weather and storms . Lots of bugs as well but everything is holding on can’t wait for tomatoes 🍅 yummy 😋. Have a blessed day everyone! ❤🙏
