    Speaking of vertical farming. One of the things that Jon mentioned was that the reason mulberries aren't found in grocery stores is that they go bad too quickly to be transported to a grocery store and sold. I would hope that vertical farming would allow mulberries to be grown locally and delivered more quickly.

    I believe you sadly don‘t. The sour dough bread we see here is far of from most German convenience bakeries. They are taking the same route as Americans already did and are now returning from. Price is king vs. #supportYourLocalBakery.

    Same here, Im so happy to live in Silesia-Poland where bakery is on every bigger street, and sourdough bread "na zakwasie" is plain normal thing. I was so surprised and dissapointed when i was in Scotland, no such thing there.

    My wife was on a dying path 10 years ago. Through a food journal she found out that she had GMO Poisoning that had all but destroyed her gut. A friend that does sourdough came and did a demonstration for my prep group. My wife had not eaten bread for several years due to adverse reactions. She ate a quarter slice of her bread and had NO REACTION. We were hooked.

    What he says in this video is 100% correct. I started baking sourdough a few months ago (didnt we all!?) and the first few LOOKED like a disaster, but they still tasted great - better than anything you'd buy in a supermarket. After a few months, I can bake a loaf that you could easily sell. It's a really addictive journey getting better at baking the loaves!

    Had a starter in DC named Maurice I started in the 80's-I use grapes and pears to feed him-I understand someone kidnapped him-hope he is still alive.Started Sven 2 months ago (another starter) and he is doing fine. Good luck to all bakers and remember get some sleep

    I love it. I wish we had a society that defined success beyond just the profit of a business. Good for you working locally and thinking about improving things. There's actually a phrase for a this type of worldview: post-growth economy, and we need it now more than ever. I made mulberry bran muffins from my tree in the backyard about 2 weeks ago. The fruit is gone now, but I look forward to it coming back next year.

    Please bend your knees! I know you're young and strong, but lifting the wrong way will catch up with you, and you sure don't need a hernia or two. I don't know a whole lot about bread baking but I hung and taped sheet rock for many years. Very interesting video. I learned a lot. Thanks.

    This was so enlightening and relaxing to watch. I have taken up bread making again and can’t wait for Saturdays to bake sourdough. My starter is “Betty” after my mom and all my breads are called “Betty Bread”. I’ve learned something new every weekend. I’ve come close to tossing the dough but have decided to not let a little dough get the better of me. So far it’s been the right choice and I’m rewarded with delicious bread, pretty too. Thank you for taking time from your day to help us realize the joy of dough.

    I'm a little obsessed lately with the "perfect" bread. I've come close to what I think is perfect, but I'm definitely still learning. Is there anything better than edible mistakes?? Loved the idea of volunteering at a local bakery to learn more. I named my starter Gertrude or Gerti for short. I had no idea how easy it was/is to make something from scratch with a little bit of time and patience. So very much worth it all. Thank you for these videos. They absolutely sum up everything right and worthy about shopping local, eating fresh, and being a part of your community.

    Love the video and learned a great deal. Appreciate that you’re planting trees. I was sorry to see the tree go from a pot to a hole in the ground. There’s a good chance that mulberry tree is root-bound. Best to shake and wash out that root ball so that you can open up those roots maybe even trimming some back. This will give those roots a chance to spread out making for a healthier, happier and more productive friend. Hope this is helpful.

    3:20 It's interesting to see a commercial mixer working the dough, you can really see the hook grab the dough and stretch it around. Unlike my little home mixer which seems to grab the entire ball and slap it around the bowl. I guess your dough is of a higher quality both in terms of ingredients and process.

    Excellent again...as you say the secret of breadmaking..professionally..is getting up at 4:30 every day and adjusting your daily routine round your breadmaking. My wife's nephew has a bakery in The Loire area of France...gets up at 4:30 and has to take the kids to the bakery who sleep more...then to school from there...its a dedication to a way of life.

    So much excllent info ! I am a long time baker of my own breads and sourdough and this info took me to a new level and answered many questions that have been generated in my own experience ! Also been growing much of my own food and herbs for many years so none of it is at all foreign or particularly new to me except the many questions answered ! Thank you for doing these two videos as I watched the hour long one first from Proof ! Truly excellent info. Interestingl I have been experimenting with infusing herbs in my bread.

    very good video, thanks for sharing! I stopped eating bread from the supermarket a long time ago and it has improved my health tremendously! when I want bread, I only buy bread from a boutique french bakery, way smaller than the bakery in this video, but just as good I think. blessings!

    I just recently started baking bread. I baked maybe 2 loaves before I tried sourdough, first loaf flopped hard! But that second one... when it came out of the oven and I could smell that it was sourdough and was beautiful! And the crunch of the crust and the flavor... I almost cried... now my wife has gotten over being mad about me picking up another hoppy and we enjoy my breads... even she has caught the fever and is starting to bake breads. Such a wonderful thing to pull a beautiful loaf out of the oven!

    Used to be afraid of making bread because I thought it was difficult. Now that I have been baking, thanks to Covid 19 MCO, I love making bread. I have sourdough starter in the fridge and use it now and again.
