Restaurant-Worthy Lechon Manok at Home (EASY & Delicious!), Roasted in Oven, Lechon manok is a Filipino spit-roasted chicken in our case oven roasted dish made with chicken marinated in a mixture of garlic, bay leaf, onion, black pepper, soy sauce, etc. (see ingredients below). The marinade may also be sweetened with muscovado or brown sugar. It is distinctively stuffed with tanglad (lemongrass) and roasted over charcoal or oven. It is typically eaten dipped in a toyomansi or silimansi mixture of soy sauce, calamansi, and labuyo chilis. It is paired with white rice or puso and commonly served with atchara pickles as a side dish. It is a very popular dish in the Philippines and is readily available at roadside restaurants.
Ingredients:
1 kg. whole chicken
10 cups water
6 tbsp. soy sauce
6 tbsp. liquid seasoning
6 tbsp. oyster sauce
1 piece onion
4 cloves garlic
4 tbsp. salt
1 tbsp. sugar
1 tsp. black pepper
3 pieces bay leaves
2 pieces lemon grass
