We challenged resident Bon Appétit supertaster and test kitchen director Chris Morocco to recreate Samin Nosrat's ravioli recipe using every sense he has - other than sight. Does Chris have all the salt, fat, acid, and heat he'll need to step up to the challenge?

    It's funny how in the newer episodes where he goes wrong is often adding too many ingredients that arent there, he's been burned too many times by things that hardly contribute to the flavor 😆

    I think he would recognize his own dishes immediately. He is Chris Marocco, not a random amateur. A little bit of failure and doubt is, what makes this format so exciting.

    The nutmeg really impressed me. But it's so fascinating that Chris guesses the most exotic dishes right and then something like ravioli is so tough. The simplest things are often the hardest.

    nutmeg has a distinct smell/taste that's hard to miss, still it is impressive how he noted it among many other ingredients!

    @@eugeniahimangee8653 absolutely. When Nutmeg comes to the party, you don't often miss it. Plus, whenever Italians or Greeks use cream in a dish, they'll traditionally add a pinch of nutmeg. (Ricotta isn't cream, but the mild creaminess would fall into the cream category instead of the sharp aged cheese category.)

    Some badly designed bottle's caps do loosen up when resting and does further release when being squeezed (especially with oil in the brim)

    one time at a hibachi restaurant this happened to me with yumyum sauce in front of everyone it was so embarrassing 😭😭 and then he made me a new plate so i felt even worse

    This is a common issue with oil in those bottles. I’ve been sabotaged by them too many times. The plastic stretches over time and the seal is broken with the oil

    @@MrRossman2 It's not some tasteless food coloring, it's spinach in the dough. The flavor is obviously subtle but not absent.

    @@davidsommen1324 but it would be extremely subtle. Spinach is known for being able to dye food without affecting flavor because it's so naturally pigmented. The amount required to make it green actually might not have tasted like spinach at all, or just barely. They couldn't use much because it would affect the integrity of the dough otherwise.

    I think it would also be fun to see Chris blindfolded in the kitchen while they're cooking so he can hear and smell the cooking process. Possibly also tasting the dish at the end but would be a fun spin to just try without.

    He's incredibly talented! But nutmeg is pretty easy to spot in a savory dish. Even a little feels out of place, at least to American taste buds. We're used to nutmeg in sweet preparations, whereas Greek & Italian food use it in savory food all the time. I find nutmeg or cinnamon jarring in savory dishes, even the smallest pinch.

    They simply aren't getting the views anymore to justify it. These things still take money. To some it may look like you can shoot this for 20 bucks. That's not the case. The test kitchen probably made this dish 30 or 40 times before he ever got a crack at it. They are doing fewer videos b/c unlike a couple years ago they aren't getting sponsorships amd have far fewer viewers.

    I'm amazed how close he can get it without seeing it, I could never. It would be really interesting to see how close he can get it by seeing it as well though, I feel like this was a tough one. Maybe a more complicated dish where he is allowed to see it also? Only allowed to taste it but clothes pin his nose shut haha

    True, but it’s also legit the only thing you can see really. In other dishes there are multiple plated aspects and the look of this one was ‘green squares with cheese’. He has the squares and the cheese, so 2/3 of the look!

    Maybe they should give judges at least a little wiggle room with the announcement at the start. It gets somehow weird, all of them repeating the same text word by word…
