Hi! I worked at OG for 6 years. The gorgonzola sauce is peppercorn ranch mixed with gorgonzola cheese. The calabrian chille sauce is TBSP calabrian chille paste , TSP pesto and TBSP butter. Fun fact. Not a single recipe has olive oil in it except the seasoned tomatoes and that's used as a garnish for other dishes.

I worked at Subway for about 8 months and I'd always make sandwiches that were discontinued as long as someone could explain to me what went on it and we of course had the ingredients. The system had all the old sandwiches in it, but we had to add extra cheese or guacamole or something like that to balance out the price because they were usually pretty underpriced lol. I remember one sandwich with A LOT of stuff on it costing like $7 for a footlong when the usual just ham or turkey footlong is like $8. My manager eventually got mad at me for doing this, but I'd still make the sandwiches and just tell them it would have to be a ham and it would cost extra for everything else they wanted on it. Most people were ok with it, because they had been missing their favorite sandwich lol.

I love how nice some of the people on the phone in the opening bits of these are. She literally told him how they made it like not everyone would be kind enough to do that in response to *"I'll make it myself."*

One of my heaviest cheese users were two gentleman coming in during lunch. Get the same meals every time. I would make each of them a salad for two and use a full block of cheese on each salad. Full block of cheese for each of their entrees. And a full block of cheese in a grater left at the time and they’d use that up to. To this day I’m still convinced it was a thousand mice in men suits.
