Ideally, you need both a male and a female for pollination. Just like humans. Although, dates from seeds have low chances of producing good tasting fruits

Hi, I don't speak your language, but are you saying the date seedling with wider but less leaves is male and the one with thinner and more leaves is female? I am wondering if you have experience with growing seedling dates until they produce fruit? Is it around 50% male, 50% female palms and how many produce good quality fruit? Thanks!
