It's so interesting to see people eating stroganogff with pasta (I guess this the original way). In Brazil we love stroganogff with white rice and some crispy french fries.

Hello Donal 🧑🏻👍🏻, I like your rendition of beef stroganoff with aromatic vegetables 🧅🧄🍄! Dinner for breakfast is a good idea. Because of tradition, we (in the western world) ascribe portion size to the three daily meals as follows: breakfast (sm), lunch (med), and dinner (lg). It may be more sensible and healthier to do the following instead: breakfast (lg), lunch (sm), and dinner (med).

Donal, I like the idea in general, but I'd definitely eat at least a half portion for breakfast, but at least doing the prep of all the ingredients so you can put it all together fresh in the evening is a great stress relief. If one is working during the week but you still want a freshly cooked meal, you can prep a bunch of onions, carrots, and celery (separately--your mirepoix) and store them in the fridge. That is usually about 80% of the time spent on prep. Dry brining a chicken or cut of meat the day before is another great tip. There are just so many things about cooking that require practice and reflection, but the results are often increased confidence in the kitchen, a better and healthier diet, better flavor, and cost savings.

Since I can't eat onions (allergies) and was first shown how to make stroganoff from a Hungarian friend with the same allergy... mine is a little different from yours. I usually add more garlic to my stroganoff and Bell peppers (because I like that additional flavour. I also use sour cream instead of full-fat cream because it adds a tang to it that cream just doesn't. If I make this ahead, I generally cook the beef but leave out the sour cream, so it can be frozen in meal-size amounts. Then when I want this for a meal it's pretty simple to cook pasta and re-heat the beef, adding the sour cream when it's almost heated through.

I'm not a big fan of oatmeal or cold cereal for breakfast, and I hate to dirty up pans cooking eggs and such, only to leave them in the sink and run off to work. So each week (usually on Sunday afternoon) I'll make a big pot of a thick and hearty soup, like a zuppa toscana or a ham, beans and veggies. The delicious and nutritious soup goes in a giant Tupperware bowl and into the fridge, and every workday morning I heat a large bowl of it in the microwave. Voila! Dinner for breakfast.
