As an intermediate learner this was very helpful. I’ll visiting Korean in the summer, Iv Been learning Korean for a year now, but I haven’t gotten around to learning specifically what you would say when ordering food and most videos on it are made for beginners so just a little too basic for me, so thank you for making a more detailed guide for ordering food !

For 맛있게 드셨어요 when you respond with 맛있게 먹었어요 the understanding is that as a customer you're treated with more respect?

Yes, that's correct. It's actually okay for the waiting staff to say 맛있게 먹었어요. If the waiting person is an older lady and she's talking to a young person, then it's fine to say 맛있게 먹었어요?, but 드셨어요 helps to be more respectful.
I know it's used commonly, but when do you use the 개/개요/ what is it's true purpose?
