About MK8/Deluxe: The Individual track records use something called "Glide Vectoring/GV", where they drift off a glider ramp, then vector back towards the track. Another form of GV that is used is "Motion Glider/MG", where the use both analog and motion controls to turn the kart to unnatural levels. The reason GV and MG is faster then just going straight is that while forward and backward speed is hard capped, the diagonal speed has a soft cap akin to Mario 64's Backwards Long Jump, just to a more subtle degree. This soft cap is so lenient, you would gain speed faster than what the soft cap takes away.
