I love your cooking style and it's similar to mine. I am vegan and I don't cook the oil whem I am cooking. I use olive oil but I put it in at the last minute, maybe before 2 or 3 minutes. If I have to use oil from the beginning I use avocado oil. It is good to use in the oven and air fryer too. When you are cooking please use vegetable oil. If you use olive oil it is not good for your health, its effect will be worse. Because olive oil is not resisting the heat. Canola oil and corn oil aren't healthy.
