Because it's new. The ones run by old people are worn out over the years, which IMO adds charm and character to those stalls. Makes me think, "damn if it's been in use for that long, the food must be good"

凄く美味しそう!! 個人的には玉ねぎじゃなく、ねぎだったらって思うけど、八王子はたまねぎなんですよね。スープと麺、分厚いチャーシュー、メンマ、ほうれん草や海苔…最高です😋

@@Luna-vv5mx 残念ながら、こちらの屋台は食べたことがありません 日本では屋台が減少傾向にあり、あまり食べる機会もないのです Unfortunately, I have never eaten at this food stall In Japan, the number of food stalls has been decreasing, so there aren't many opportunities to eat at them

Anything is about keeping on working. Over time word gets out and pop* after 2-3 years half the town knows your place and goes there

Like he said he already owns a restaurant (izikaya that serves grilled meat and drinks if my Japanese doesn’t fail me lol) and wanted to be proactive not on the defense because of the virus. Costs are considerably lower for this cart so I suspect he’ll make it work until things open back up someday.

It's really nice seeing a new generation of raman stall owners continue the tradition! Hopefully he will have a successful experience and inspire others to join the trade as well.

I swear it's like night and day! How lucky to rent a tiny apartment and never have to cook because restaurant quality food Is so accessable you Don't have to pay for gasoline because you can just walk to pick it up! You are so lucky

I lot of the Japanese food scene seems very intimate. Instead of feeding 100 at a time, he can give it his all to feed a few.

So many yatai operators are elderly it's depressing; it gives the impression of a dying tradition preserved by people with nothing else to do. Seeing a younger guy create his own gives me hope.

The Dad's wonderfully crafted Yatai made the set up not as time consuming as you notice the cooker is built-in the cart. And the wood, back wall, cabinets are the cleanest I've seen. Many people will pay him to build it.

when i was travel to japan back in 2017, i always want to eat ramen from street ramen vendor like this, because i think there is no point to eat fancy ramen at shopping mall or fancy restaurant, this is the real japan cuisine, street food!

Love these ramen stall videos. I started to make chicken soup on regular basis, and every evening I boil some noodles, add garlic, greens, bamboo sprouts, soy sauce, some chicken and an egg. So I serve this like a ramen and eat while watching these videos. Not exactly a ramen but it's good too :)

@@slavskee Hey dude. There are plenty of recipe videos around here, I mostly looked for Japanese ones. I'd recommend, watch several Japanese recipes to compare and grasp the basics :)
