【二米炊烟】Sour Bamboo Shoots 從竹筍變成酸筍，正是人間美味的誕生

When the summer was about to end, I went to the forest to dig a basket of bamboo shoots.
Some are soaked into sour bamboo shoots, which smell sour and stinky.
But for many people, it’s delicious and irreplaceable.
Some others are rinsed several times after boiling, then sliced and dried.
It is raining recently, a friend just comes to visit, so I made the braised pig's trotters with dried bamboo shoots and braised fish with sour bamboo shoots.
夏天快要結束的時候，去竹林里挖了一筐竹筍回家
一部份泡成了酸筍，就是那種聞起來酸酸臭臭的
但是對於很多人來說它就是人間美味
另外一部份，煮熟多次漂洗後，切片晒成了筍乾
這段時間一直下雨，正好今天有朋友來家裡做客
於是做了筍乾燒豬蹄和酸筍燜魚

there is a special bamboo that can be eaten, otherwise it tastes bitter first cook that young bamboo and chop it. My ingredients to cook this bamboo is garlic, shallot,turmeric, coriander, cumin, aromatic ginger, galingale, chili, ginger, candlenut then mix it until like sauce then fry when the aroma come out add bamboo finally pour coconut milk. Wait for 10-15 minutes add salt and sugar
