As a Guyanese who spent lots of time in both T&T and Grens, (Love my Caribbean people) this is not Oil Down....... but it looks good same way. Can't go wrong with coconut milk and plenty of seasoning.

As a Grenadian I was curious to see your version of oil down. I'm happy you said Trini version. I have seen other vids where Trinidadians make oildown like a soup. As you said you like it wet. Good thing about food is you can twist it to your liking. In Grenada a couple things we never do with oil down is 1( Never ever stir it) 2) (The coconut milk is reduced where it is not like a soup) 3) (Freshly grated coconut to get your milk.) 4) callallo covers the top completely where you cannot see anything under only when it's cooked. Your Trini version even though abit different look good👍🏾

This is actually Run down. My family is from Grenada and when they are crunched on time they make this and call it run down instead of oil down. I believe Jamaicans also call what he made run down. I feel like oil down is less about the ingredients and more about the technique (packing the pot, no stirring, reducing the coconut milk, etc.).
