Panchmel Dal is a popular and flavorful lentil dish from the state of Rajasthan in India. It is made by combining five different types of lentils (toor dal, moong dal, chana dal, urad dal, and masoor dal) and cooking them with a variety of aromatic spices, such as cumin, turmeric, and red chili powder. The dish is finished with a tempering of fried onions, garlic, and tomatoes, which adds richness and depth of flavor. Panchmel Dal is a vegetarian and gluten-free recipe that is high in protein, fiber, and essential nutrients. It is commonly served with rice, roti, or naan bread and can be enjoyed as a main dish or a side dish. This dish is a must-try for anyone who loves Indian cuisine or wants to explore new flavors and ingredients.
Ingredients:
1 cup mixed lentils (toor dal, moong dal, chana dal, urad dal, and masoor dal)
4 cups water
2 tablespoons ghee or oil
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/2 teaspoon fenugreek seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon cumin powder
Salt to taste
1 large onion, finely chopped
4 cloves garlic, minced
2 tomatoes, finely chopped
1/2 teaspoon garam masala
1 tablespoon chopped cilantro leaves
Instructions:
Rinse the mixed lentils well and soak them in water for 30 minutes.
Drain the lentils and add them to a pressure cooker along with 4 cups of water, turmeric powder, and salt. Pressure cook the lentils for 3-4 whistles or until the lentils are soft and cooked through.
In a pan, heat ghee or oil over medium heat. Add cumin seeds, mustard seeds, and fenugreek seeds, and let them crackle for a few seconds.
Add chopped onions and garlic and sauté until the onions are golden brown.
Add chopped tomatoes, red chili powder, coriander powder, and cumin powder, and cook until the tomatoes are soft and mushy.
Add the cooked lentils to the pan along with the garam masala, and mix well. Add more water if the dal is too thick.
Simmer the dal for 5-10 minutes or until the flavors have blended well.
Garnish with chopped cilantro leaves and serve hot with rice, roti, or naan bread.
Enjoy your delicious and nutritious Panchmel Dal.
