Protein/Energy Bar..
Ingredients:
- 1 cup seedless dates
- 1 cup dried apricots
- 1 cup cashews
- 1 cup almonds
- 1 cup pistachios
- 1/4 cup pumpkin seeds
- 2 tablespoons sesame seeds
- 1/4 cup desiccated coconut
- 1/2 cup oats
- A pinch of salt
- 2 tablespoons honey

Instructions:
1. Soak Dates:
- Soak 1 cup of seedless dates in hot water for about 10 minutes to soften them.
2. Roast Dry Ingredients:
- In a pan, dry roasteach of dried apricots, cashews, almonds, pistachios, and pumpkin seeds.
- Add 2 tablespoons of sesame seeds and roast until they turn golden brown.
- Set aside to cool.
3. Prepare Date Paste:
- Drain the soaked dates and blend them into a smooth paste.
4. Cook Date Paste:
- In a large pan, add the date paste and cook on medium heat until it thickens and starts to pull away from the sides of the pan.
5. Combine Ingredients:
- To the thickened date paste, add the roasted dry ingredients, desiccated coconut, oats, a pinch of salt, and 2 tablespoons of honey.
- Mix everything thoroughly until well combined.
6. Shape the Bars:
- Spread the mixture evenly in a flat bowl or a baking dish lined with parchment paper.
- Press it down firmly to flatten it into a uniform layer.
- Allow it to cool completely.
7. Cut into Bars:
- Once cooled, cut the mixture into bars or squares as desired.
8. Store:
- Store the protein energy bars in an airtight container. They can be kept at room temperature for a few days or refrigerated for longer shelf life.
