Properly choosing and using your Shun knives

Celebrity chef Alton Brown explains how to choose which Shun is the best knife for a given kitchen job and how to use it properly. Alton Brown, star of Food Network's "Good Eats" and the emcee of the channel's "Iron Chef America" competitions believes Shun are the best kitchen knives because of their strength and sharpness.
Shun kitchen knives are made with high density Japanese stainless steel. Compared to the German knives many home chefs have in their kitchens that have a 22-degree angled blade, Shun knives are much sharper thanks to their 16-degree angled blade, which provides a much finer cutting edge. That super-fine blade is still strong thanks to layers upon layers of two different kinds of highly-durable stainless steel. That layering process produces a unique swirl design in the metal of the knife blade that is complimented by the specially-crafted pakkawood handles.
