INGREDIENTS
Fluffy Vanilla Cupcakes
¾ cup unsalted butter, at room temperature
1 ½ cup sugar
5 large eggs, at room temperature
2 ½ cup cake and pastry flour
2 tsp baking powder
¼ tsp salt
1 cup 2% milk, at room temperature
1 Tbsp vanilla extract
Fluffy Frosting
¾ cup unsalted butter, at room temperature
cup 4-6 cups of icing sugar, sifted
6 Tbsp 2% milk
1 ½ tsp vanilla extract
decorating sugar, for garnish (optional)
Fluffy Frosting Assembly
1. Preheat the oven to 350 F and line 2 muffin tins with large cupcake liners.
2. Beat the butter and sugar until well combined. Add the eggs one at a time, beating well after each addition.
3. In a separate bowl, sift the flour, baking powder and salt. Stir the milk and vanilla together. Add the flour and the milk alternately to the butter mixture, starting and ending with the flour and beating well after each addition. Spoon the batter (using an ice cream scoop is best) into the cupcake cups so they are two thirds full and bake for about 18 minutes, until a tester inserted in the centre comes out clean. Cool the cupcakes in the tins.
4. For the frosting, use a stand mixer fitted with the paddle attachment or electric beaters, beat the butter until it is fluffy. Add 2 cups of the icing sugar and first beat on low speed to incorporate, then increase the speed to high, until fluffy. Add the milk and vanilla and beat in. Add the remaining 2 cups of icing sugar and beat in, adding further up to 6 cups until a fluffy and spreadable consistency is achieved (the softness of your butter when you begin is the reason you may have to make this adjustment). Add a little colouring paste if you wish, or separate the white frosting into a few bowls and stir a different colour into each bowl.
5. Pipe or spread the frosting on each cupcake and sprinkle with decorating sugar if you wish. Allow the cupcakes to set for an hour before serving.
6. The cupcakes should be stored at room temperature and will keep in an airtight container for up to 2 days.

Thank you so much for this recipe. I'm not a baker and I kept trying and I couldn't make cupcakes for nothing but I just made these for THANKSGIVING and they were great. I didn't get the frosting right, I guess I mixed it too much because it was running off of my cupcakes. I feel like I'll get it right if I keep trying.

+Hasina Esajas if you don't have cake and pastry flour you should mAke your own, in a cup of flour take of two tbsp of flour then add 2 tbsp of cornstarch in it and that becomes a cake and pastry flour, Anna showed this technique in 1 episode

What is happening is that there is humidity forming around the cups. This will happen if it sits for a day or so. Try to keep them in an airtight container once they cool to room temperature.

Hi Anna I love your baking .Please here in the uk we have plain ,self raising ,strong flour and other flour and have just found cake flour which I love so much so which one is cake and pastry flour .

Tried the vanilla cupcake recipe exactly as written. Beautifully moist cake but tasted a bit eggy when eaten plain. For the buttercream frosting, it curdled as soon as I added the milk for some reason. Next will most like add all the icing sugar and then add the milk as needed.

For the frosting - it is not uncommon for it to curdle a bit. You are adding cold milk to room temperature butter. The milk will chill the butter and so it looks curdled, but it isn't. When you add the 2 cups of icing sugar make sure you blend it in very well. give it a few minutes on medium speed to really incorporate the sugar into the butter and fluff up the mixture. Then add the liquid again beating it in well and then the remainder of the icing sugar. If it does this again, just keep beating it (after all the icing sugar is added) until it is smooth and fluffy

Hello Anna, can cupcakes be frozen along with the topings? If so, for how long? Thx
Using all-purpose flour instead of pastry flour If your recipe calls for pastry flour but you don’t have any, don’t worry. You can make a substitute by whisking together 1 cup of all-purpose flour minus 2 tablespoons (or 14 tablespoons of all-purpose flour) with 2 tablespoons of cornstarch. This mixture will have a lower protein content than straight all-purpose flour, producing more tender baked goods that are very similar to what pastry flour itself would produce. Using cake flour instead of pastry flour If you don’t have any pastry flour but you happen to have cake flour, you can substitute for pastry flour by adding an extra 2 tablespoons of cake flour to your recipe.

Libi Pappachen I don't know about pastry flour, but cake flour has cornstarch in it, self raising flour contains baking powder, and all purpose flour is just plain flour

no, cake is a bit lighter it has cornstarch and self rising has baking powder

Cake and pastry flour is simply a type of flour that is ground much finer so it creates a lighter cake. You can use all purpose in a pinch if you can’t get the cake flour.

1 cup of butter is 225g or 2 sticks. You can go from there. Divide or multiply it depending on what you need.
