    Ok I've never blanched my vegetables and I've always canned for the meat times and until you mentioned it I didn't know either and I'm still here so... there ya go. I also boil some noodles and freeze in snack size ziplock baggies and add to the soup when I open the jar. That way I always have a serving of noodles ready to go for each jar

    I was just sitting here thinking about this canned chicken soup, you know if water were to get low or no water, this would be awesome to eat and also add rice or noodles or even potatoes and you wouldn't need more water with all the broth in this. Leisa, thank you, this is awesome !!!

    Especially if the store reduces the price near closing. I’ve picked up these types of cooked chix for $1.99 and had an an enjoyable chicken dinner, then made soup and stock from the bones. I’m with her- not a purist.

    I’ve never canned soup, but I really want to make and can some chicken soup now!! This just looks SO DELICIOUS!! Thanks for sharing Leisa!! Ps…Dumplings on top of this would be THE BOMB! Ps… my sister had a catering friend who bought all their chicken for salads, pulled chicken, etc, from Costco’s rotisserie chicken. They said it was actually cheaper than buying their whole birds and roasting them themselves!!

    Yes, where we live our chicken is a couple dollars more than the rotisserie. Then I cook the bones for two days and get a gallon or more of delicious broth. King Soopers chicken that is rotisserie just went up two dollars.

    What you’ve made here is by far the most useful thing I have canned! I call this chicken soup starter, my method is a bit different but the outcome is pretty much the same. With families around me getting sick, it’s crazy convenient to open a jar, add the carb of choice, bring to a boil, and deliver! I never knew quarts were 75 min and you were supposed to blanch the veggies first, I always make them just the way you did here. So thank you for teaching me something new - again!

    My best friend just gave me a pressure canner. I have been dragging my feet on doing that….but my freezer needs relief so now I have no excuse to delay much longer. I have been working on my Prep Pantry and getting it stocked and organized. Now I want to can meat (I do have commercially canned meats and fish), and the idea of soups, etc. that I can simply tuck into a gift basket along with a loaf of homemade bread and share with a sick or excessively busy friend in need would be fabulous.

    I used a pint of this to make a rice side dish, and it was fantastic! I put one cup of parboiled rice in my rice cooker, added a pint of the chicken soup plus 1/2 jar of water, and a tablespoon of butter. Then I let the rice cooker do it’s thing. Let it sit for 10-15 mins with the “keep warm” on, fluffed it, and served it. Season with salt and pepper if needed. Great rice and chicken/veggie main dish or side dish!

    Thanks Leisa this is my plan for today. I bought 4 pkgs of chicken breasts (bone in) on sale for $1.32#. I cut the meat off & canned ugly chicken with it. I got a whole chicken from the senior food give away. I cooked that with the bones from the breasts & will use the meat from it today to make chicken soup. Thanks for the video. It is most helpful.

    It was turkey, not chicken, but we pretty much had this soup for lunch today :) It was a "after-Thanksgiving" sale bird that we used for "ugly turkey", turkey broth, and turkey soup. (So much canning! lol) Canned it in December of 2021 and it was still yummy today, of course.

    When you do bone broth next week, please consider spending some detailed time on the vegetables cuttings you add to make the stock. Specifically would like to see the parts of the onion used. The idea of using parts that I've thrown out for years is intriguing but leery of using the wrong pieces. Thanks for sharing your knowledge

    I used my ForJars lids yesterday for the first time. it was a quick waterbacth salsa verde. 3 out of 4 lids sealed BUT I remembered I did't de-bubble one of the jars. Probably that one. Could be? I'll be canning tomorrow so will give them another try. I have been looking for a chicken soup recipe. There are a ton out there but you're a trusted provider of information. Thanks!!!!

    Bits and pieces: Made the chicken soup yesterday and it came out amazing....thank you! Bought 2 monster rotisserie chickens from costco and I got one left over so it's groundhog day....can't have too much chicken soup. Since I loathe peeling carrots, scrubbing them with a steel wool pad worked. My knife skills have blossomed watching all the videos....not a bad thing have in Chicago.

    OMG, canned this a couple of weekends ago. Used it as a base for chicken pot pie and a can of potoes and some peas. It was over the top delicious. Hubby give it two thumbs up.     I am desperate for jars! I have been buying them but I've got to get out to the thrift stores and on craigslist to get more jars! Craigslist has a lot of old jars with the metal that goes 2 ways on the top but I would assume I need to buy gaskets and I would rather not have to do that. I make great chicken soup and that is the 1st thing I had planned to can. Here's a tip for when you heat it up squeeze some fresh lemon in there and it will totally change the soup it won't taste like lemon but it will be almost sparkly on your tongue it's delicious!

    I'm so glad that you said you didn't see the steam either, my first time using a pressure canner, I didn't see the steam.. I could hear it..feel it..but not see it.. I ruined 5 jars of food cause my canner boiled completely dry.. and 2 jars actually cracked...all because I keep waiting to SEE the steam cause that's ALL anyone ever says...you have to see the steam..

    Carrots can be cold pack. No problem with that. And celeri don't have much air or water.. again, no problem. The necesseties to blanch vegetable before canning is for the composition to be modified.. carrots and celeri hold their shape and don't throw out air and water. Here in Canada the guidelinw for cold pack carrots is 30 minutes... no problem with 75 minutes!

    I love that description, chicken soup is something you measure with your soul. I add a LOT of garlic & onions to mine because I tend to make it if someone is sick. I wouldn't can with the scoop of gochujang I add for umami & sinus clearing.

    This looks like it would be a really good thing to have in my house I can see chicken and noodles chicken and rice chicken and dumplings like you said. I may even consider some beef to do the same things with.

    If I were to make this and blanch the veg, how long would I need to blanch them? I LOVE this soup idea! Hubs can just take a pint to work and have a wonderful lunch, and I can gift a jar or two to my 92 year old BFF!

    Don't forget the drippings from the chicken in the containers. Rotisserie chicken was fine to use like this @ $3.99 a piece, but @ almost $8.00 no way!

    That is true. At my local store my friend works in the deli and told me that it is the same chickens you buy in the meat aisle. In my store the rotisserie chicken are cheaper than the raw ones. 😮

    What I've done is to put the jars in the canner and let the water just simmer for 30 minutes before I get the canner up to pressure; that way, the veggies will have cooked some which is 'probably' equivalent to blanching.

    I used precooked chicken in my soup but didn't like it as well as raw chicken, seemed to be over processed for the chicken. Love chicken soup.

    Yeah, I’ve made quite a few different canned soups with that combo of veggies and obviously never caught the instructions for blanching the vegetables. It makes sense though, knowing you blanch them before canning just them alone, but have always done exactly what you did when doing soups. I’ve canned gallons and gallons of soup like that, it’s all been tasty and no problems with the digestion or you know, staying alive. 😂. Literally years I’ve been doing this and just now realized I should have been blanching them all along. Not always the sharpest crayon! 😂😂

    I agree what we're going through isn't going to end soon. I am currently living in an RV (was our retirement plan) which is not food storage friendly. We are days from closing on a new home (new retirement plan) & will have a large pantry I'm excited to fill! I can't help but feel anxious that I'm behind on preparations. It looks like we'll be too late for a spring garden (we have some amending to do) but we will definitely have a fall one. I can't wait to get to canning and dehydrating our harvest & filling our pantry !We're turning one bedroom into a walk in pantry. I'm excited to get started but am a bit anxious I'm late in getting started. I see a lot of ugly chicken & pork in my near future! 😁
