One of my sons favorite recipes he still talks about today was a pizza omelet from the frugal gourmet

Helly, never heed anyone's callous, negative comments; just skip over them without reading... I was impressed with the many easy and yummy looking recipes. First thing I thought of was that I couldn't wait to show my 22 year old son this video clip. I think he'll be as impressed as I was! I'll be adding a few extra ingredients to my next shopping list! Tear your corn tortillas up into tiny pieces at a ratio of about 3 tortillas for every 2 eggs you plan to use. Fry them until they're crispy. Add about 1/4 cup of diced onion for every 3 tortillas, and however much jalapeño you enjoy for spice, fry them some more, then add eggs (mixed with milk before hand, the way you'd do for scrambled eggs). When it's all done, serve that in a flour tortilla with sharp cheddar. You're welcome ;)

I use corn only because of celiac. They are just as good, but can't find extra large ones..

The tortillas are high in carbs, so not sure how they are good for keto? Unless you can buy low keto tortillas where you live?

@GEM4sta ty for the info, where I live there are very few affordable low carb tortillas. The average price for one small bag is about $8 or more.

If you ever run put of crisps/potato chips, cut up left over tortillas put some olive oil in a pan an fry them off in a really hot pan for 30-45 second an then salt them an put some fresh ground black pepper. They make a great snack.

I make similar foods. Basil tomato and cheese. Canadian bacon , canned beans sour cream cilantro...so versatile. I only use corn tortillas though.

The tortilla would cook and burn before the eggs finished cooking . So by wetting the tortilla it give the eggs time to cook while the tortilla is drying, steaming and crisping.
