To make Potato Fry
Potato - 3/4 Kg
Oil - 2 Tbsp
Mustard Seeds - 1 Tsp (Buy: amzn.to/449sawp )
Cumin Seeds - 1 Tsp (Buy: amzn.to/2NTgTMv)
Fennel Seeds - 1 1/2 Tsp (Buy: amzn.to/3YtGEpL)
Garlic - 1 Tbsp
Ginger
Green Chilli - 2 Nos
Onion - 2 Nos
Salt - 1 Tsp (Buy: amzn.to/2vg124l)
Turmeric Powder - 1/2 Tsp (Buy: amzn.to/2RC4fm4)
Hing / Asafoetida - 1/2 Tsp (Buy: amzn.to/313n0Dm)
Chilli Powder - 2 Tsp (Buy: amzn.to/3b4yHyg)
Curry Leaves
Besan / Gram Flour - 2 1/2 Tsp
Coriander Leaves
METHOD:
1. Boil the potatoes, peel off the skin, cut them into small pieces and mash them. Put them aside in a bowl.
2. Take sesame oil in a pan. Add mustard seeds, cumin seeds and fennel seeds. Saute.
3. Once the mustard seeds start splattering, add finely chopped garlic, ginger, green chillies and onions. Saute until the onions are slighlty browned - for 5 mins.
4. Then add salt, turmeric powder, hing/asafoetida, red chilli powder and mix well on a medium low flame.
5. Add curry leaves and gram flour. Mix again.
6. Add mashed potatoes to the pan and mix it with the masala.
7. Check for seasoning and lastly add the finely chopped coriander leaves. Mix well.
8. Turn off the heat and cut the sal leaves into small portions.
9. Make the cut sal leaves into cones and fill them with the potato masala.
10. Seal the curry on all sides and qrap it up with a cotton thread as shown in the video.
11. That's it, Madurai special potato fry is ready to be served hot and nice with curd rice or rasam rice or sambar rice.
Madurai Pottalam Urulai Kizhangu is a special side dish made and wrapped in Sal leaves in Madurai area. This is a savoury curry which can be easily made with regular ingredients available in our kitchens. This is also known as kizhangu pottalam and you can enjoy this curry with curd rice, it tastes really good. You can also prepare these potato parcels and carry with you for lunch or dinner during travelling.
