For sure, this is the best soup I have ever made! THANK YOU VERY MUCH INDEED! Loved the idea of using red onion and carrot, instead of using store-bought veggie stock. I have some minor additions for consideration, that worked out well for me: 1) I did not know the spice you used. I used a pinch of Cumin instead. 2) Also added some paprika and chili pepper. 3) At the very end, after blending the mix, I added some grated hard cheese instead of cream. Bon appetit!

Is there a substitution for that?

Carrots will take the longest to cook. If one puts the carrots in while softening the red onion, they will begin cooking sooner... and making double-use of that heat. Duh!! [ Adding Chicken Broth or Vegetable Broth would boost the flavor of the soup,... instead of water, which dilutes the intensity of the veg flavors.]

Yes you can do, without butter,

Just use a handheld inverted blender to make the soup.

This will be my first time making this soup. My question is can I add mushrooms.
