To all the people talking about they need gloves. Gloves melt around fryers, so it is hard to use them. Also, by the Food and Beverage Administration, you are supposed to change gloves after 15 minutes of use and wash your hands for 16 seconds in between changes, pretty hard to when your slammed! And last, VERY many places you eat at, do not use gloves, and many of them are big time chef's, Ramsey, Puck, and all those big timers that own big time restaurants! They are however, are supposed to wash their hands often and in between touching foods.

Cajun Plaisance well I also work at Popeyes. Even before the pandemic, gloves were and are mandatory, every piece of chicken we dropped we had gloves on. Again, even before the pandemic, we were required to wash our hands every 15 to 20 minutes, slammed or not. And if it does get busy. We stock. On a normal day we always drop small amount of pieces of chicken. 6-8 piece consistently, but when the rush comes we stock. 10 piece. That buys time to wash hands properly. No hate but it can be done. My co workers are very well trained to do all of it.

People have allergies so I doubt it is peanut. Old southern cooks (black) always used Crisco for frying and baking. Chicken is crispy and pie crusts are flaky. Crisco was made with lard (animal fat). Later it was introduced as a vegetable shortening for more healthy cooking.

No. I work at popeyes and the seasoning is what gives it its flavor. Basically, what we do is we clean the raw chicken, throw it in a machine, and pour the seasoning in the machine. And it's either mild or spicy seasoning. Then put it in a big pan and put in the cooler. You're not too far off though, the oil makes the chicken tender and juicy.

Also at 2:29. In majority of the USA, a case of chicken breast or thighs(for industrial use) is 40lbs x 100(weekly)= 4,000lbs a week, which I feel for Popeyes might be an understatement but then again on a 4 week period, that ~16,000 pounds of chicken a month. Which by averages could be around ~3,000-5,000 chickens they cook and sell every month.

Rhennie It depends. If we get a special order or if they want it fresh then it has to be by order. But usually we cook it in batches just so we can have stock for drive thru or people in the front.

Everyone does realize that the man cooking in this video did everything to a t, except the fact that he clapped his chicken(clapping the chicken together to get rid of excess flour) directly over the fryer.. Which in return causes an excessive amount of crumbs to build at the bottom of the fryer, and when the access crumbs build up they begin to form around the heating coils causing them to burn.. which in return gives your famous Popeyes chicken a very burnt/nasty taste.. if your gonna do it do it right😉

  • @garyblair7913

He didn't even stack the chicken after he battered it. Didn't drop it in the grease right and the gloves I use doesn't melt by the fryers. I wonder how many times they failed inspections.

Man you can tell the folks here have pride in the product they put out. It's a shame that's what most places lack. When people say the secret ingridient is love, this is what they mean. Without it, you get some low quality, low standard, soggy mess that should've never been served
