About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZread.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

    Good afternoon Hiro, Love your videos ! Where is the citrus element in the ponzu ? i've heard of lemon ponu, lime ponzu, and you also mentioned using yuzu for this part, but you forgot in the demo. Also how much hondashi to use if no bonito flakes?

    I went to a 'Japanese ' restaurant one time and all they had was teriyaki. Nowadays we have a choice of multiple sushi trains and restaurants. These videos are so helpful. That first place spurred me to make diy Japanese. Thanks

    Outstanding, once again our man, Chef Hiro comes through again with another practical applicable lesson on how to do it yourself. Ponzu is my favorite Japanese sauce. I like to use it for my favorite dish Yaki Soba which makes for an excellent combo. One day if ever feasible I would like to come and meet and greet Hiro and experience his food1st hand. Please keep up the good work.

    Godzilla is loosely based of off his catch phrase. Godzilla would yell " GOOOOOOOOOOOOOOOOOOOOOOOOD AFTERNOOOOOON" But the japanese crowd didnt enjoy it as much so they change d it.

    Great video Hiro, was wondering how to make this sauce. Seen where you had a knife giveaway sometime. Wish I knew about it would have appreciated that, recently had house fire in my kitchen.     Hiro I'm not sure if you'll read this or not or if someone can give me input on this but I just bought some "sushi grade tuna" from my local market and as I was cutting it I noticed thin white lines not very big maybe about a little less then a half an inch and I was able to pull them out with tweezers. Are these worms or just part of the fishes muscle structure?

    Don’t worry, what they all show on youtube (every recipe) is only the « basic » ingredients used to make the sauce and the basic techniques. Just feel free to add yuzu to your taste, just try separately. Make his version here then take a bowl of the end product and add yuzu to see what it taste. Cooking is just like science, try, try and try again new stuff, don’t be limited 😃
