They looked beautiful and delicious, but lots of wasted food. I hope they reuse the cake scraps on something else, and the mango meat around the pit could be used in a purée.

Blueberries in the last cakes were out of place.

I just don't get it why the Bakers do not leave things on the mixers I would think it would go a lot faster get it also if you use a big enough sheet pan twice as much for 3rd of much and you won't waste as much cake that drives me nuts

The mixer part is likely because certain things require certain ways of mixing them (for example, if you whip part of the batter then you need to be gentle mixing the rest of the ingredients in so it doesn't deflate). I'm not sure I understand what you're saying in the second half though, but these things are likely all for a reason, since it's a professional place
