Kulfi or Qulfi (/kʊlfiː/) is a frozen dairy dessert originating in the Indian subcontinent in the 16th century. It is often described as "traditional Indian ice cream". It is popular throughout present-day India, Sri Lanka, Pakistan, Bangladesh, Nepal, Burma (Myanmar), and the Middle East, and widely available in restaurants serving cuisines from the Indian subcontinent around the world.
Kulfi is similar to ice cream in appearance and taste but denser and creamier. It comes in various flavours. The more traditional ones are cream (malai), rose, mango, cardamom (elaichi), saffron (kesar or zafran), and pistachio. |

This kulfi recipe is great! The kulfi came out awesome. I tried with 1.25 liters of milk, .5 of cream but felt the .5 cup of sugar that I added was still a tad bit sweeter than I wanted. Should have tasted it as I was adding sugar to ensure the sweetness is what I desired.

I thought the same. There are recipes online using condensed milk, evaporated milk, and cream. The first few I seen didn't incorporate the pistachio paste into it...they just put some chopped on the bottom and top. Good luck if you try but ima stick with the original. It looks creamy and delicious! Then I'll try a "corner cutter" maybe (idk).
it's 1/2 cup pistachio but in the description of recipe you have mentioned 1/2 tsp

I think boiling the milk in a wide- mouth utensil is imperative here or else it will take 40 min to get the basundi consistency

Most milks are diluted with water, so if you don't cook the milk long enough and it still has too much water, when it freezes you will get those icy flakes. He had also added a bit of water to the pistachio paste, I would have added some of the milk.

Regular cold water at around 40 or 50° produces enough of a thermal change to remove skin. You do not need ice. North Indians I’ve been hulling pistachios for thousands of years before KZread!
Steel utensils on non-stick nice! >50% of Indian recipe videos have this mistake and not a healthy choice.
Never allowed to eat Kulfi as a child 🤯😳 I am scratching my head. Should have told us why cause that is cruel!!
