We have a brew pub here on the lake, in Big Lake, Ak that serves these. They also have something called 7 and 7 which is 7 of each pig wings and chicken wings.
I like this! I learned in the Goldees class to enjoy the flavor of the meat without the sauce or at least on the side. Its changed the way I cook and eat BBQ. Thanks for sharing putting in my order today.

A pub I frequent in Lynbrook, NY, the RiverMill, has Pig Wings on its appetizer menu. Not smoked, but served in a brown asian flavored sauce. Very tasty and popular.
I've been wanting to make something like this for a while but struggle to find pork shanks in my area. The Germans have been cooking a skin on version called Schweinhaxe for some time, and although not barbecue it is delicious. Q39 in Kansas City used to have a pork shank on their menu as well- it was outstanding. Looking forward to trying this out. Great video!

A previous employer was hip on feeding us, and the caterer they contracted served these braised. They were wonderful, and we called them “porksickles”. YUM!!

Pumphouse restaurant in woodriver il serve these. Soo good!!
Mac's Speed Shop in Charlotte, NC sells these as "Hog Wings" and they French up the bone a little bit, so you have a nice little handle, like a chicken lollipop. I think this is a Carolina thing, since pork is their specialty, as I haven't seen it anywhere else outside of the Carolinas.
Had these for the 1st time 12 years ago at Knucklehead's, which sadly is no more. Killer Dinner with Sweet Potato Fries.
Pig wings are delicious. I tried them at a county fair here in middle Tennessee.
These are great. About ten years ago they got introduced to the restaurant market and sold well when I put them on the menu. Very delicious 🐷

Our local restaurant depot hasn’t carried the farmland ones in about 3 years, they don’t have any actually. I found them from one place but they have shot up in price something crazy, 2.75 a wing! Also, never seen them raw like Jeremy has here. They’ve always been precooked, just deep fry or put in the oven then sauce. They were great but I’m sure these ones would be even better being smoked. Wish I could find them again at realistic prices but I guess those days are gone.

need ur opinion please. back couple years ago i started with pellet grill. now i kinda can taste the smoke flavor. im using a pitboss 700FB. should i crank that P setting to highest setting?

Well, after smoking and feeding chicken lollipops to my neighbors, who ask, "How did you do this!!?" and me offering but NOBODY willing to learn (a lesson there), I've got to do similar with pig shins like this. Doing ribs tomorrow, butcher wrapped in smoked lard (of course), but now I've got to do this. And just in time for Thanksgiving weekend once the birds are gone. Thanks!

Just did your pork belly recipe from a couple.days ago, the wife absolutely loved it. After she basically demolished it she got up and gave me a kiss and said it was the best thing I ever cooked for her. I thought it was okay, I'm not a pork belly fan but she loves the stuff.

Thank you for this most excellent recipe. But just an FYI: Porter Road hasn''t had 'Pig Wings' in stock for well over a year. Since first seeing your excellent video, we''ve never been able to buy the 'pig wing' from Porter Road - they never have them in stock and instead, they just ask to put our name on a waiting list. Well - We've been "waiting" for well over a year and as of today (June 11, 2023) , Porter Road still doesn't have 'pig wings' available and only offers to put our name on a waiting list. But aside from this minor issue, we've had the opportunity to try out your recipe and of course, everything came out wonderful!!

Have you ever tried smoking all of your tallow and then putting it back into the tub to store it? then you just have smoked tallow at the ready whenever you want it? not sure if the smoking makes it less shelf stable

Those look really good. I found something in the stroes awhile back called pork steaks and those were really good too. I think there are lots of cuts of pork that have not been made mainstream yet And I will definitely trty these.

Pork steaks are great with a mustard based bbq sauce! They are just pork shoulder or Boston butt roasts that are thinly sliced. Can pick up a 6lb roast for $13 over here in south tx. A great alternative steak that most have never tried.
What seasoning did you use for the pig wings. How, where can I order some??
Are these pork shanks with the skin removed? I haven't seen these before. Also, You should try smoked Lamb Shank and/or Lamb shoulder. Lamb is amazing when smoked slow.
We call these 'Haug" wings here in Hagerstown, Md.
My local pub used to sell these and they were so good, They called them Hog Wings. But stop because they were hard to get.

I have been buying Porter Road for the last 6 months. It is really good, but grocery stores have conditioned us to chicken breasts and ground beef. So, overall, the experience has been awesome, and I keep ordering it, but you want some content for us novices.

$7 a head (with the 15% off) for a pork drumstick doesn't scream ultimate tailgate food to me. Maybe I'm partying with the wrong class of people. Mad sciencing pays a lot more than I'm currently getting at my job. 🤣

Anyone know of a good butcher like porter roads in the west coast area? Porter roads looks good but not for those shipping prices lol
Looks good the only bad part is now the meat suppliers are look for absurd prices for a cut few had heard of prior to this. $10.50 or more per pound for a shank sorry I can get rib eye steaks for less than than.
Question for you. Long time subscriber here and I just watched your smoked chicken video again from awhile back. In that video you said you felt that small granules for seasoning inhibit smoke flavor but you’re using small granules here. Have you since changed your mind since the chicken thigh video or is it that it doesn’t matter with pork because it needs more time on the smoker? If you haven’t tried it yet I might try doing thighs with big and small granules at the same time to compare the smoke flavor! I’m very interested in what the results would show.

Great question. I still think that’s true. The difference is short cook and pellets. If the smoke flavor will be mild no matter what, I’m gonna do something else to increase the flavor. I don’t know if it is granule size that inhibits smoke absorption or if the complex flavors drown out the smoke flavor but I do know that the net result is a muted smoke flavor. So do I think the granule size matters? Yes. Am I sure? No. Hope this clarifies. Thanks for watching!

I always use coarse pepper and Kosher salt on brisket and pork butt because in my experience those help develop a better bark, not sure if that has anything to do with bark formation though. Tonight I’m doing thighs and I was feeling Lawry’s seasoning salt on it instead of coarse seasoning. It’ll be done in about 15 minutes, we’ll see how it turns out. Keep up the great content!
