Just in case people want to try and replicate his sauce, he added capers (maybe a teaspoon or so) before the anchovies.
I like black olives in my whore sauce. Sicilian ones make a lot more sense though.
I've just try make something simillar and it was awesome. Thank you for this great idea. I've never thought pork skin as a pasta like, would by so good.
