He did kill it and I was proud of him. But to be honest, and not to upset you, the best cheesesteaks I have had have not been in Philly. In fact the majority of cheesesteaks I have had in Philly have been terrible. Usually in Jersey or old school claymont steak shop in claymont Delaware my man 😂 down here in Virginia and the outer Banks, back and forth, stranded without anything good like that. But this dude moved from up that way to Williamsburg Virginia, has his rolls brought in, and I have to say it says good as any cheesesteak I have ever eaten in my life. Shocked the hell out of me but super expensive

I watched a man make a philly cheese and he flipped the cheese sides onto the heat for 30 seconds or so...he said the 🧀 cheese had to incorporate with the meat onions and pepper juice's. Then you spread it across the toasted roll. The first one I ever had from Philadelphia had only Tabasco Hot Sauce at every table. The vinegar is what I remember making it pop?!?! It's been a while lol mmmmm
FINALLY SOMEONE WHO MAKES IT AUTHENTIC!!!
strips rather than diced onions is how I usually see Philly’s served. Doesn’t harm anything to have em diced and in every bite so I guess it’s just a preference thing.
Being able to watch chef speak n cook w/out anyone nagging him... Priceless.

The suburbs and Jersey do have excellent steak sandwiches. BTW, his sandwich looked delicious, but I would've doctored it up with the local (classic) accoutrement (40 year old virgin). I'm for local and cultural variations that pay homage to the original classic. It makes life interesting.
