Pisco is a distilled spirit made from grapes in Peru & Chile. It's essentially a grape brandy but with a few key distinctions that make it completely unique. Peruvian Pisco has a lot of distinct differences from Chilean Pisco and in this video I dive deep into Everything you need to know about Peruvian Pisco.
Peru claims it's been making Pisco for over 400 years and the name actually comes from a city and port in Peru. There are three main Types of Peruvian Pisco: Puro, Acholado and Mosto Verde. Each one has key characteristics that make them unique from one another.

    Great video! I love the focus on Pisco! I personally love Pisco! I'm a Bourbon guy but lived in Peru, and Pisco has a special place in my heart.     Pisco is Peruvian. Same way Cognac is French. Chile also makes a Brandy.... why do they call it Pisco??? Well you have to ask them to be honest. Historical evidence shows that Pisco originated in what is modern day Peru. The city of Pisco dates back to the 16th century and the continuity of its traditions can be seen today. Chile changed the name of one of its city's to Pisco in 1936. Why?? Well you gotta ask them (although its pretty obvious why) Honestly, they make good Brandy, so why are they so stubborn to call it Pisco??? Nobody knows. The European Union recognizes Peru as the originator of Pisco but allows Chile to call its brandy Pisco as well. Chile imports Peruvian Pisco but does not allow for it to be called Pisco on the bottles..... why??? You gotta ask them. They have no historical claim. No continuity. No receipts. Why call it Pisco? They make good Brandy..... but to label it as Pisco....... its weird. Its as if Americans wanted to call Bourbon Scotch for some random reason.

    Hi Lui, thanks a lot for your video. The aging of pisco reminds me baijiu, a traditional Chinese spirit. Baijiu does not use oak barrels either. Baijiu is made by grains, and the fermentation is done with the help of "jiuqu", which contain yeast, fungi and molds. Different jiuqu and grains, etc. make the flavors of baijiu very complicated. Baijiu contains many types, and the most important types are qingxiang (light aroma), nongxiang (strong aroma), and jiangxiang (sauce aroma). In this sense, Baijiu is more conceptually similar to Whiskey, and qingxiang, nongxiang and jiangxiang are more conceptually similar to Scotch, Bourbon, etc. There are also research on the flavoring molecules in baijiu. In qingxiang, they are mainly ethyl acetate with some ethyl lactate; ethyl hexanoate is important in nongxiang. But there is still no certain conclusions for jiangxiang. Typical ABV of Baijiu is more than 50%, and most of them tastes more harsh and stronger than Brandy, Whiskey, etc. Hope this information is helpful for you.

    Hello Lui, great channel... I just got pisco bottle from Chile... friend of mine gave me Capel Reservado de Guarda. I really like the flavor of it and because I'm a scotch fan I enjoy aging it for a year or so in the barrel. The flavor reminds me of fine Italian grappa. Thank you for great info... cheers

    I would vote for Peru. I love pisco made from albilla grapes from Tacama, Peru, and it is the best pisco I have ever tasted. Tacama has the oldest vinyard in South America. Why not Peru, then?

    Hi, the grapes were brought in to Peru by the Spanish but they brought the cepas and they cultivate the grapes on the southern coast of Peru, Pisco Ica to mention some. The most popular grapes are. Italia, Quebranta and acholado. Acholado it's the combination of two grapes. Italia it's an smoothly grape, most of the time you drink it by itself, quebranta since it's a most robust grape it's most likely to b use on cocktail and the acholado since it's a combination of an smooth and robust grapes, can be use for both ways. And yes, Pisco it's 100% Peruvian. The Chilean named a city Pisco way after just to try to compete with the Peruvian pisco.

    @@alexurias8798 do you know how to read? I mention that the sepa was cultivated on the southern areas of Peru, Lima, Ica, Arequipa Moquegua just to mention some regions. And Pisco is a province of the Ica Regio. Province not a City. Get your facts straight before you do a comment.

    @@sergiopinto7736 ok I accept your comment states that, however it is still not a city in Chile… and Pisco is still the Capital of the province of Pisco, Peru… If you’re talking about Pisco Elqui it’s not a city. Maybe an homage? If Chile wanted to compete they’d change the name of the city or the province. Nobody actually knows, it’s all speculation so if you don’t know for sure just keep it in your head. If you’re Peruvian, be proud Chileans wanted to create the same spirit. No country needs to compete.

    @@alexurias8798 some information regarding Chile’s new city “The original name of the town was La Greda. It was later changed to La Unión. In February 1936, the Law Decree 5,798 changed its name to Pisco Elqui to reinforce Chile's claim to have rights over the drink.” Pisco it’s original from Peru and we all know that, the name of Pisco was given by the Inca Pachacutec in the year 1450 and the real name was “Piscu” and Piscu means birds in Quechua language and if I’m not mistaken, the Spanish changed to Pisco. I’m not saying that the pisco it’s from Chile. I just sharing some information regarding the pisco. We both agree that the sepas were brought up to Peru by the Spanish correct? On the second trip to Peru in 1528 of Francisco Pizarro was the first time Pisco was mention but as wine.

    Pisco is a Peruvian port in Ica, founded in 1640. Producing Pisco drink from old times. Is native from Peru. You all should know that Chile unfortunately copies all from their neighbors, Peru, Argentina and others. They barely have anything original. Maybe empanadas. But Pisco is Peruvian the Aguardiente is the Chilean drink they want to be called Pisco to steal importance.

    Although Cognac must be aged in wood, Armagnac thankfully doesn't have that restriction. If you love Pisco and Singani, you'll also really like white Armagnac, hope you find some! But 👀 seriously? No love for vodka? You should explore well crafted quality vodka! Salud.

    I got into Cognac a little while ago and really was intrigued by armagnac, just haven't gotten a bottle yet! White armagnac sounds very interesting! And no haha no love at all for vodka. Even well crafted vodka. I'd rather drink anything else, no matter the production quality of it.

    Heard about others who have agave allergies, can you use Peruvian pisco as a tequila replacement in margaritas? If you think so, which classification would you recommend?

    It's thought because tequila and pisco are so vastly different. I wouldn't use Pisco myself in a margarita but i know some pisco brands always advertise it. It's probably good but probably won't taste like a margarita really.

    @@akatosh2795 so if you like that lime and clear spirit taste I'd actually recommend a whole other cocktail that is very similar. The Caipirinha. When done right, it tastes pretty similar to a Margarita but it's made with Cachaça (Brazil's national spirit). I have. A few videos on it actually if you want to know more!

    @@IbnShisha1 it's the only one I've ever tried and it's the one i carry at my bar and restaurant. It's good! I've heard there are better options out there but I haven't found any. Its a bit difficult to work with because the flavor is so bold but it's a very good bottle.
