This week we have the pleasure of traveling to London to meet chef Maryam Amirsardary of Rosewater Bakery & Eatery to learn about the bakery's original recipe for their famous pistachio and cardamom cake with lemon and cream cheese frosting. PISTACHIO & CARDAMOM CAKE
Batter Ingredients:
100g all-purpose flour
120g pistachio meal
1 tsp cardamom powder
1.5 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
75g softened butter
3 eggs
200g sugar
1 tbsp pistachio paste
70ml cooking oil
100ml buttermilk
270g chopped pistachios
Icing ingredients
75g softened butter
435g cream cheese
200g powdered sugar
1 tsp lemon juice
Zest of half a lemon
Directions
Preheat oven to 180C/355F.
Grease an 8-inch round tin with butter and line with parchment paper.
In a bowl, mix flour, pistachio meal, cardamom, baking powder, baking soda, and salt. Set aside until ready to use.
In a large bowl, beat butter until fluffy.
Add sugar and cream mixture until fluffy.
Add pistachio paste and mix well.
Incorporate eggs one at a time.
Add in oil.
Gradually add flour mixture alternating with buttermilk, beginning and ending with flour mixture. Pour the batter into the prepared tin.
Add in 70g of chopped pistachios.
Bake at 180C/355F for about 45 min or until a toothpick inserted into the center of the cake comes out clean.
Let the cake sit in the tin for 10 min.
Flip cake on to a cake board and let it cool.
Slice cake horizontally in half
To make the icing, add 2 tbsp of cream cheese to the butter and combine.
Add all the powdered sugar and the rest of the cream cheese and mix well.
Add the lemon juice and zest.
Pour into a piping bag with a round tip.
Ice the first layer of the cake and top with chopped pistachios.
Put the second layer on, cover with icing, and top with chopped pistachios.
Coat around the cake with a thin layer of icing and pat chopped pistachios on top.

    Per someone who made this and posted it on Reddit, he doubled the cardamom. Can't wait to try it! After watching that video, that looks excellent! It can be so hard to make a cake from scratch too.

    Omg i just made this cake!! It was theee bomb.. everyone including myself loved it. Everyone had more than 2 slices.. Thankyou SOoOo much I substituted pistachio meal to almond flour and didn't have pistachio paste.. and instead of lemon I used orange ... my new cake recipe.. Thankyou again

BOLO DE PISTACHE E CARDAMOMO Ingredientes da massa: 100g de farinha multiuso 120g de farinha de pistache 1 colher de chá de cardamomo em pó 1,5 colher de chá de fermento em pó 1/4 colher de chá de bicarbonato de sódio 1/4 colher de chá de sal 75g de manteiga amolecida 3 ovos 200g de açúcar 1 colher de sopa de pasta de pistache 70ml de óleo de cozinha 100ml de leitelho 270g de pistache picado Ingredientes de cobertura 75g de manteiga amolecida 435g de queijo cremoso 200g de açúcar em pó 1 colher de chá de suco de limão Raspas de meio limão instruções Pré-aqueça o forno a 180C/355F. Unte uma forma redonda de 20 cm com manteiga e forre com papel manteiga. Em uma tigela, misture a farinha, a farinha de pistache, o cardamomo, o fermento, o bicarbonato e o sal. Separe até estar pronto para usar. Em uma tigela grande, bata a manteiga até ficar cremosa. Adicione a mistura de açúcar e creme até ficar cremosa. Adicione a pasta de pistache e misture bem. Incorpore os ovos um de cada vez. Adicione óleo. Aos poucos, adicione a mistura de farinha alternando com o leitelho, começando e terminando com a mistura de farinha. Despeje a massa na forma preparada. Adicione 70g de pistache picado. Asse a 180C/355F por cerca de 45 minutos ou até que um palito inserido no centro do bolo saia limpo. Deixe o bolo descansar na forma por 10 min. Vire o bolo sobre uma tábua e deixe esfriar. Corte o bolo horizontalmente ao meio Para fazer a cobertura, adicione 2 colheres de sopa de cream cheese à manteiga e misture. Adicione todo o açúcar de confeiteiro e o restante do cream cheese e misture bem. Adicione o suco e as raspas de limão. Despeje em um saco de confeitar com bico redondo. Coloque gelo na primeira camada do bolo e cubra com pistache picado. Coloque a segunda camada, cubra com glacê e cubra com pistache picado. Cubra o bolo com uma fina camada de glacê e espalhe pistache picado por cima.

    I have two questions. Do you also level cut the cake top off and discard it so the layers stack easier? And are the pistachios added as a garnish on the top and sides after you ice it also raw? Thanks in advance.

    You can buy it (probably online, as I wasn't able to find one in a physical store), but if you want to make one yourself, just search on youtube, there are few recepies, it's very simple, all you really need is a good food processor.

    Well, I tried it, and my cake never made it past one layer high. To be fair I don't think it is the fault of her recipe. After tries with other recipes for making a cake from scratch, I am declaring myself cake incompetent and will use a box cake with pudding in it and add pistachios or anything else to that instead. The result, though flat, did have a nice taste.

    hello, I can't get my butter and sugar mixture to cream. I have put 75g butter to 200g sugar and it is just crystals when mixed. Are the amounts correct? thank you

    Always make sure to hv butter cooled to room temperature b4 creaming with sugar. Cold butter will just curdle

    Chef recommends that you chop up our own pistachios in a food processor for best results.

    You may used any kind of buttermilk. Alternatively if you ad a bit of acid like lemon juice to regular milk that will also work.

    You can certainly leave it out, however it won't have that Pistachio essence.

    Hi, 1. Put the pistachio (unsalted) in the water for 2 hours 2. Dry well, then remove the skin 3. In food processor grinder the pistachio (every 100g of pistachio 10-13gram oil)

    It’s just very finely chopped pistachios. You can do it in a blender

    Consider using Monk fruit powder in place of sugar, it's safe for diabetics
