    My biggest hurdle when making lasagna is the roccota, not sure why I haven't thought to make it myself. Lol I make paneer, it's a very similar process.

    Yes, indeed. It's probably even easier than paneer as you don't need to compress it. I do prefer a bechamel for lasagne, but this basic ricotta is so quick and easy.

    @@AdventuresInSnacking I don't think I have ever had a lasagna made with a béchamel, only ricotta and mozza, maybe some cream cheese.
