    This is a great recipe and everything, but... I know people complain about the zoom on all of Ramsay's videos but this one takes it a little too far. We know he's chopping a carrot, because he says so, but you don't need to show us a 1080p carrot that fills the entire screen, because every small amount of movement in that frame makes me dizzy!

    To anyone curious about the canned tomatos or puree. Its very very common for chiefs do it. Because canned tomatos are always packed when theyre at their most ripe so better taste is actually better than using a tomato not in season.

    What a charming twist on what to do with Beef Shins ... I have only ever used them to make stock for my Meatball Vegetable Soup ... but this looks so inviting and easy ... Thanks Chef :)

    The sauce from this is amazingly delicious. I used thyme and rosemary in my recipe. Next time will try the ginger and orange juice and top with the gremolata.

    I did this with both beef and chicken... either way, it came out great! The only two modifications I did, was using a sweet white wine, and for the chicken version, I used a half lemon along with a half orange. The only thing I didn't do was make the gremolata.

    He used to make fun of chefs that cook on TV. And said they are fake cooks. We all know Gordon is a beast in the kitchen, he should make these videos himself not some stunt double. It's not about the recipe but the passion behind the person cooking that makes me get up and cook the dish.

    Everyone does Osso buco on their own art, maybe it's the best way that we all do a little bit of our own way, slightly changed from the original😉. Instead of ginger; rosemary and bay leaves... etc... Love your'e work, you should come again in Croatia, then you can visit our Continent food... Mick Jagger was always mad about our Zagorska roast turkey with mlinci, when he visited Zagreb... Zagorski strukli, Baranja's famous fish stew, manny manny things to see and explore...

    I'm trying to make do with what ingredients I have, red wine, lemons and mandarins, tomatoes, (mysterious?) chunk of beef, thyme, basil, rosemary. No stock, our family never uses stock. So I substituted the stock for soy sauce.

    darksidelead you don't get the tail here in India we get 'undercut aka tenderloin' , minced beef and beef which I have no idea which part of the cow it is, they mix everything up and there is 0% fat anywhere.

    Never sure what people are complaining about when they talk about quantities. How much Carrot do you use? The quantitiy you seen in the video. How much tomato puree? The same amount as you see him put in in the video. After you have cooked once you realise that 25g of extra carrot is not going to make it taste like shit.
