Hii thanks for ur recipe, how do stabilize the cream how long does this can stand before melting? Can I add hot hot inside the egg white?

It can stay at room temperature for up to 1-2 days 1 week in an airtight container in the fridge, and 3 months in the freezer also I don't understand the hot hot
