Perfect Fried Chicken with The MeatStick X! | Using The MeatStick X Wireless Thermometer To Deep Fry

BKC Fam! I got a new toy called The MeatStick X. It's an app-enabled true wireless meat thermometer. The MeatStick X can be used to smoke, grill, roast, bake, or DEEP FRY!!! I don't know of any other product that can be used for deep-frying. The MeatStick X worked perfectly! I was amazed that it could be submerged in hot oil and still perform flawlessly. Now let's talk about this chicken. Simply put, it's phenomenal. This recipe make it juicy, tender and delicious. And that CRUNCH! This recipe takes a bit of time and prep, but I promise it's worth every bit of effort. Check out the recipe below.
Ingredients:
1 4 lb chicken, cut into 8 pieces
2 cups All-Purpose flour
2 eggs
1 cup milk
Canola Oil or your choice of frying oil
For the brine:
8 cups water
1/3 cup Kosher salt
3 cloves of garlic
1 tbsp cayenne pepper
1 tbsp whole peppercorns
8 cups ice cubes
My Chicken Seasoning
2 tbsp Seasoned Salt
2 tbsp Paprika
3 tsp Garlic Powder
3 tsp Onion Powder
1 tsp Chili Powder
1 tsp White Pepper
1 tsp Cayenne Pepper
Start with the brine. In a large pot, bring the water to a rolling boil and add the Kosher salt and cayenne pepper. Boil for 3 minutes to dissolve the salt. Remove from the heat and add the garlic and peppercorns. Carefully add the ice and stir to cool the brine. Add the chicken to a large bowl. When the brine is cooled below 40 degrees, pour the brine over the chicken and mix everything around. Cover the bowl and refrigerate overnight, 24 hours is better.
After the chicken has brined, pour off the liquid and let the chicken drain in a colander for at least 15 minutes.
Season the chicken liberally. Add the flour to a large bowl and add 1 tablespoon of Chicken Seasoning. Mix thouroughly. In another bowl, add the eggs, milk and 1 teaspoon of chicken seasoning. Whisk together until everything is blended together.
Dredge the chicken in the seasoned flour, then dip in the wet batter. Repeat the process and finish with a final dredge in the seasoned flour.
Heat the oil to 350 degrees in a large cast iron skillet or fryer. Be careful not to overfill the oil. 1/3 of the way usually gets it done.
Insert The MeatStick into a piece of chicken all the way up to the ceramic tip. Open the app and select the correct cooking tab.
Carefully add the chicken to the oil. When the skillet is full and the oil has calmed down, cover with the lid. Be sure to leave the vents open so steam can escape. Check every five minutes and turn the pieces for even cooking. Monitor the chicken using The MeatStick app for a perfect result. When the app gives the alert, remove the chicken and let it cool on a wire rack.

    What's good B!!     just and FYI.... Thats not deep frying.... thats pan frying.. deep frying will have chicken completely submerged in the oil..
