Ingredients Needed:
Chips:
-1.5 quarts (1420ml) veggie oil
-Corn Tortillas
-Salt to Taste
Traditional:
- 4oz (113g) bacon
- 1 lb (16oz) chicken thighs, boneless & skinless
- 1 medium onion
- 5 cloves of garlic, finely chopped
- 2 Serrano chilies
- 2 teaspoons (2g) ground cumin
- 1 teaspoons (1g) ground coriander
- 1 teaspoons (1g) smoked paprika
- 1/2 teaspoons (1g) cinnamon
- 2 dried guajillo chilies, de-seeded
- 1 dried ancho chili, de-seeded
- 4 cups (960ml) chicken stock
- 2 ears of corn
-1/2 28 oz can crushed tomatoes
- salt to taste
- cilantro for garnish
- 2 avocados, diced
- 3 limes
- 1 piece Oaxaca cheese
-1 cup shredded cheddar
Fancy:
- 3-4 fried corn tortillas
- 3-4 Chicken skins
- 100ml cream
- 150ml soup
- 35g tomato paste
- salt to taste

After blending the chilies, the (meatless) broth freezes very well. I portion it into mason jars and freeze until needed. Makes it very easy to assemble this soup during the week with leftover rotisserie chicken (or any protein).
I love the fact that you put effort into every ads you make, makes them always super enjoyable to watch unlike copy paste ads that just ruin the mood

I'm Mexican and I approve of this recipe. We don't add corn hadn't seen that before but that's okay and preferably use Oaxaca cheese on top as well

I am Mexican too and i agree with both of you. And I'd add some lettuce, but that's just a personal taste, I like most of soups with lettuce, onion and some slices of tomato.

Corn is a common Tex-Mex thing. Especially in central Texas. We also add some whole Cumin sometimes too.
Made this tonight, took just about 1 hour 40min total and was incredible. This recipe knocks it way way out of the park dude. Served 5 with leftovers and people went back for seconds. Really excellent!
Tortilla soup is the perfect winter food! Gotta have the lime and avocado - I also love a dollop of sour cream (cuz I'm a wuss when it comes to spicy). You really sold the home-fried tortilla chips.

@@Analogist912 Boo! That would make me sad. I know they sell frozen here by the frozen fruit. No idea what they are like, especially texture, but maybe you can make a guac kind of thing with them???
Just saying AGAIN the cookbook is so worth it. Takes your cooking and baking up a notch and it’s homemade. It’s my go to cookbook right now. I love that the ingredients are in order of use on the list and the directions are easy and funny at times 😆 Also love that each ingredient is by weight. Makes the recipes fool proof.

its a great book, simple and easy to use-- great way to learn a lot of foundations that you'll use everywhere. i worked in kitchens for a decade and this book is still relevant to me.

Love it! if you wanted to make it Authentic Mexico City Style tortilla soup, use crumbled queso fresco or Cotija on top as a topping as opposed to the bottom, and add a dollop of Crema and some Crumbled Chicharrones.
It's a great weeknight soup too. Using some leftover chicken (I'll do a few rotisserie chickens early in the week) and some black beans as well. Also I'll make a batch of Chile paste and keep that in the fridge for a few weeks to use for enchiladas, chili, tortilla soup, etc. Still you NEED those fresh Chile flavors. I've also added some masa if I want it thicker as well.
Could you try doing empanadas? there are many types, ways and varieties; some are cheesy, fishy or meaty, can have seafood, vegetables, fried or baked, etc. should be good content.

I made this soup today after watching this video because of course I started craving it lol. This recipe was fantastic! I did substitute the dried chiles for chile powder and chipotle chile powder and I had to use canned corn this time, but I want to try that method next time! My family is in a quarantine at the moment because grandpa tested positive for covid. They loved the soup, I had fun making it for them, and it made grandpa feel a bit better, so thank you 🙏🏻❤️

This is one of my favorite videos from Josh lately. I already have a chicken tortilla soup recipie that I like, but I'll probably give this one a try too just because it isn't too hard and it looks really good. Thank you thank you thank you for using Serrano and not Jalapeno peppers. Jalapenos are so waxy and have this overwhelming flavor. Serranos are almost the same heat level but the flavor is much more my style. One thing tho- no beans? I don't even like beans but Imo a tortilla soup really needs black beans.
Imagine the fancy version as a Chip and Dip!! I think It'd be a sick snack

I have made this several times and it is amazing. So glad to have found this recipe because all other recipes on YT for this aren’t it. I suggest 1 serrano pepper instead of 2. Don’t burn your pallet lol.

This recipe is fantastic. Been enjoying it for a few years as is. Decided today to mix Josh's and Rick Bayless' recipe which is much more traditional and has you toast the dried peppers, caramelize the onions and garlic a bit then blend it all together with the fire roasted tomatos and fry the paste off like a mexican salsa. Put that together with the rest of this recipes bacon, spices, corn cob fortified chicken stock and it's out of bounds.
The editing in this video is an early Christmas gift in itself.
This was my favorite dish growing up in Mexico and can confirm it is prepared like that and you did it phenomenal ! Mom does it with tortillas chopped in long stripes , the broth and then fresh cheese and avocado on top ! You pretty much NAILED IT , that’s what I call TALENT.

You won't get the cob but frozen corn works just fine for a recipe like this.

My family loves when I make this soup and they request it at least once a week. I can’t be mad, it’s one of my favorites too. I usually add several Chile de arbol with the guijillo and top with extra Serrano/jalapeño and onion and cilantro. I also put a bunch of cilantro on top of the soup after adding the chicken and let it simmer the rest of the time and take it out before serving.
They call them "ears" of corn but I've never HEARD why...

I just have to say this is the recipe that drew me into this channel. It's amazing. Really well done and fun to cook. If there is anything I could add from my humble experience, don't shred that chicken with a fork! Use your kitchen aid with the paddle attachment so much easier. Also, maybe indulge a little have a couple shots and really enjoy the moment. Great job Josh thank you for a great recipe!

i'm a big proponent of chunky ,heavy soups where i'm from (the netherlands) one of our staple winter "dishes" is "snert" which is pea soup, with some other veggies like carrots and leek and the such, then throw in 2 entire smoked sausages cut in small disks, and add small bacon bits you precooked in a frying pan beforehand, you can throw in the kitchen sink after if you want, that's kind of the point of soup, right? :) then let that slowly sit overnight until it becomes so thick the ladle actually can stay upright in it. pea soup becomes "snert" after that process of reducing it overnight, it's kind of a people either love or hate it thing, i LOVE it which makes it turn a bit darker, and basically only the sausage and bacon bits have not turned to mush and are now more trapped in the soup than they are really floating on top of it :D you have to take it really slow overnight though, as obviously it's going to burn on the bottom of the pan if you don't stir it to the top every so often. most gas stoves don't even go that low unless you put a spacer in between, but taking care of it by stirring the big pot every hour orso will ofcourse help the consistency throughout, but it can be pretty hands off if you get it set up right. it kind of hard to make it look good, although a nice piece of rustic brown bread next to it helps a lot for presentation, but the dark green makes it kind of christmassy to me lol traditionally it goes with rye bread, and some serve bacon that's first cooked, then smoked with the bread instead of adding the bacon to the soup, some even do both lol :) it kind of threads the boundaries of what is considered soup, and starts being stew lol add some maggi for a bit of salt when you serve it and it's amazing winter comfort food.
