They used sourdough starter instead of yeast. I'm guessing they don't want the bread becoming too sour so they keep it cold. Edit: Adding timestamp when they added sourdough starter 0:28

If you go to Korean bakeries, most of them carry these types of sausage bread 😊 Paris baguette or like tour le jours
