Archers don't threaten any squares unless they take a special feat that allows them to, not sure if they are in the game but they do exist in pnp

Did I miss what "adjacent" means? Does it mean "in the party" or "within a certain range" or "standing right next to each other"?

Most of the Teamwork feats seem very underwhelming on anything but an Inquisitor or Vanguard. Outflank, Seize the Moment and Shake it Off seem alright, if you can squeezs them in on several characters, but the rest? Having to invest them on several characters is a major downside, especially when compared to feats you can take independently. Why is +2 AC against flanking enemies worth this, when Armor Focus gives you +1 AC against everything that isn't Touch, for instance? Same goes for Shield Wall, except now Dodge is an option too. Why use Allied Spellcaster on several mages instead of just giving Spell Penetration to whoever happen to run into enemy spell resistance? Shielded Caster might as well be replaced by Combat Casting. Precise Strike seems particularly bad, being a measely 1d6 worth of damage for at minimum a 2 feat investment. Might as well just pick Arcane Strike, Piranha Strike or Power Attack, if you ask me, because at least those feats keep scaling to remain somewhat useful.

Hear me out, what if the entire team has sneak attack? You have a Knifemaster Rogue, a Deliverer Slayer, a Sanctified Slayer Inquisitor, and a Vivisectionist Alchemist, plus maybe an Eldritch Scoundrel for the Careful Spell + Grease exploit, and you give them all Outflank and Precise Strike. Given the abysmal AI, it's pretty easy to flank opponents in turn-based mode. Granted, I'm trying this out in the sequel WOTR, but I think the principal is the same. It may not be the most optimal build, (God forbid you come across elementals and oozes!) but it sure is fun when it goes smoothly. Not to mention it wrecks ranged attackers with OAs.

How do you tell if they are active/working though?

Unfortunately there is no visual indicator that a Teamwork feat is active except by looking at the combat logs, and in most cases you have to look at the results of dice rolls and modifiers to confirm that it actually worked. One of the easiest teamwork feats is Precise Strike (I think) because it works like a sneak attack adding +1d6 damage. So if you see an extra 1d6 of damage applied after an attack then it worked, otherwise you were not clear enough to a companion who also has Precise Strike. One of the advantages of Turn Based combat if you have it enabled is that it is easier to get your party into positions so that teamwork feats will work. In real time with pause the flow of battle can force your party to move dynamically and this can result in either you constantly pausing the gameplay in combat to micro-manage the positions of everyone, or you are just always out of position for anything to work

These "roll twice" benefits are not worth it. So you roll again, the chances of a better roll are slim, especially if your first roll is mediocre or better. Yes, once in a while there may be some benefit, but not enough IMO.
