Not too hard, just put a glass or metal bowl over a pot of boiling water, melt 2/3rds of the chocolate, and stir constantly until melted, and add in the remaining third, stir until smooth and glossy. Another way is to microwave it in 30 second intervals, stirring every time the time is up, until chocolate is smooth and glossy, although this technique is not 100% reliable.

i've been missing some saffitz struggles in these gourmet vids; it's not a true gourmet ep unless claire is ebbing on the verge of a meltdown. and also brad's macgyver magic. p.s. gaby is so precious, she's always so supportive :)

Claire does much more crafting for her segment than any of the other chefs.

Personal opinion next episode should be pop tarts Strawberry for sure
