Thats right were showing you how to Pasteurize. Were doing it with Shiitake although this will apply to Oyster as well just the differences you can use different style containers for Oyster at some point we'll do Oyster Pasteurize video but for now enjoy this one.

    It's not easy to come by affordable and sustainable substrates in Hawaii. Thanks for sharing. It's always inspiring to see people getting creative and finding unique solutions. I am interested in seeing how well some of the invasive grasses like guinea grass would perform as substrates.

    Yeah thanks for comments and feedback. I've used a local grass with success, want to play with it more. I am currently experimenting with a fast growing nitrogen rich tree to use as nitrogen supplementation to get away from grain. Video to come soon. Thanks for viewing, commenting and feed back.

    I usually chip fresh although it can dry out a but but if left too long it gets a little weird.

    This is what I was looking for, pasteurization and open air inoculation. Do you have any kind of air filtration where you inoculate or by using the right amount of spawn will outrun any comtamination? I want to do it with lions mane and king oyster. Maybe cook some blocks in the oven at 80°C and then inoculate with grain spawn.

    Hi? For shiitake which strain are you using? I want to try and use baggase instead of sawdust. Have you had any issues with green moulds?

    Thanks for the video, I am interested in using sugar cane as a substrate although it would be a byproduct from the mill. Shipping to Hawaii is expensive and there are a few farms growing cane. Your opinions and observations would be very helpful. Aloha

    Cane is a great substrate. In this video I used chipped cane as I couldn't get it from my mill supplier. But now I have my substrate back and yes mill is where its at it can last for a long time. I'll do a video really soon addressing this.

Also im curious if you can post the math on how much nitrogen you want in your substrate, like for every 55 gallons of sugar cane how much grain spawn are you adding? thanks again.

    Awesome so glad your enjoy videos. I really appreciate the comment. We live in southern Ecuador. You have asked one of most important questions this has been my biggest fail in growing Shiitake adding too much or too little nitrogen. Lots of variables as one has to factor in substrate and sawdust spawn. Short answer two grain blocks. If I’m chipping fresh cane nitrogen levels are higher than cane from sugar mill where so much has been pulled out of it. Also one needs to factor in how many much supplementation is in other spawn. Currently I don’t have access to my pasteurization station so I’m pressure cooking. While I was in nice rhythm with mixes I was running. During quarantine I was running low on cane so I took advantage of freshly cut eucalyptus trees not accounting that them being fresh might have a bit more nitrogen, video to come soon. Moral of story test batch it out once you find a good mix stick too it best you can still learning this lesson some 8 years in. Thanks for viewing.

    Amazing video. Pasteurising doesn't need HEPA and it is less sensitive to contamination. But do you have any comparison between pasteurising and sterilizing (pressure cooking) when it comes to shiitake yield ?

    It seems about the same to me. Although I can't verify that for sure. Unfortunately I currently do not have my pasteurization station going I had to take it down. Hope to get it back online soon and I'd like to run some tests to figure that out.

    Hey brother, love this! Just what i was looking for this morning. So its looking like you mentioned you use around 1 spawn to 6 substrate, I’m just curious to know of that 1 spawn what ratio of grain to sawdust spawn? So, i guess another way to word it is what’s the ratio of grain to hardwood in your spawn bags? Or do you do some bags of pure hardwood spawn and some of pure grains? I’m currently setting up a little mushroom farm over here in Australia and growing oysters low tech, would be epic to be able to grow shiitake too!     Hello I really appreciate the kind words, and feedback. Here is a little cheat sheet of my mix. Play with it. I use sugarcane bagazo not hardwood cause its a material that I can get. Obviously its all heated with water so that weight is not included but with a little math could be figured out. My spawn blocks are made up of Sugarcane and bran, bran is at about a 20% ratio in spawn blocks. I am pretty sure I mentioned it but unlike Oyster you can put too much nitrogen supplementation. Just play with it, I'll be curious if hard wood works in pasteurized form. 4 tubs cane (55lbs dry weight, sugar cane) 1 6oz cal sulf 26 lbs wet weight spawn (Bagazo/bran spawn blocks) (I've done less, 20lbs will work). 14 lbs grain spawn (can go up into 20lb range, just play with it) 226.75 lbs final weight on 32blocks hope it helps thanks for comment.

    Yeah I feel you can probably pasteurize almost anything...almost. I just think you need the ratio high and I think it helps to have sawdust spawn in mix for higher coverage.

    This is amazing. Of the 6 spawn blocks you use, does that include the 2 grain spawn ones? Or is it 8 bags total? Also, about how many pounds do you usually yield from one of your blocks on the first flush? Thanks for any info!

    Usually just 6 total, 4 sawdust and 2 grain. There are a lot of factors though, depending on how much grain spawn is in the sawdust spawn you can do less. Keep in mind freshly chipped wood or cane will have more nitrogen than chips that have sat. Record record record so you can dial in your right mixture. I was getting about 1lb to 1.5lb, a block. Unfortunately I currently don't have access to my pasteurization station so I am back to sterilizing until I get my space back, I'm using bigger bags and am getting more like 1.25 to 2lbs, but I think with these same big bags I could do the same with pasteurizing.     I was amazed to learn that you can get a growing medium for shiitake with sugar cane, and more amazed to see you process sugar cane whole, could you comment on that?, because one way to reduce nitrogen content would be to mix whole sugar cane with extracted one....thanks

    Yes. When making this video my source of Baggasse was unavailable. Hence the way higher work load of cutting and chipping. I now have my baggasse from sugar mill and I supplement with grain. Way less work. Good results.

I want to know whether i can use the substrate left after crushing the cane for juice? Getting hardwood is kind of expensive business but cane is easily avalaible here in my area.

    Yes definitely, great material. If its being just crushed to extract juice you'll want to use it somewhat quickly as there is still is residual sugar in it . If you get it from sugar mill, they usually get all sugar out so it can last a lot longer.

    look for pdf in which there is a test made with susbtrate of extracted sugar cane, molasses and rice bran in brasil for the commercial prod of shiitake.

    Thank you kind sir. Yeah I made that mesh basket out of mesh and wire, I just wove wire in and out to make cylinder and then cut out floor and wove in and out. Definitely could have one made that is better but its been working for years.

    Hello I just scanned video again to see which white patches you’re talking about. Are you talking about spawn block? White is mycelium which is the spawn that will colonize block and lead to mushrooms.

    Thin stainless on plywood. the lip is just wood with a pond liner material glued to it. You could bend the stainless and do the whole thing in stainless to avoid a seam.

    Hi. Great Chanel! Dont you get contamination in bags when filling them up in this free environment and no masks on? Usually they use hepa filter in baging process. You havent had a problem with that?

    I use HEPA when I STERILIZE substrate. The beauty of pasteurization is you can actually get away with a pretty open air space. It matters more the condition and cleanliness of substrate to be cooked than the actual environment to inoculate is what I have found. To take it a step further, this table was set up near the exhaust vent of the grow room behind it, most would frown on that as there is potential spore contamination, while its less than ideal I never noticed an issue due to that.

    I’d like to give this method a try sometime. Do you pressure cook your grain/sawdust spawn? Could I get away with boiling it like they do with pf tek, I don’t have a pressure cooker. Can you help me with the math for smalles scale? If I want to make 2 5L bags at the end of all, how much sawdust do I need to pasturize and how much grain+ sawdust for spawns?

    I pressure cook, and do have a pressure cooker and lab. And that is how I make my spawn. Yes my hope is that people can start doing shiitake on larger scale with-ought big PC as I know that is a huge limiting factor. Not super familiar with pf tek but if you can make spawn from it I'd say it would work. Also using kitchen top PC with syringe inoculation is another option.

    Awesome. I want to go to Argentina. Where? Sorry for super late response. Browning still takes a bit. They are ready for us to put in grow room at about 4weeks but we wait for 6weeks. We like a speckled brown not full brown. You can initiate fully white as well. I've noticed the sooner you put in room the bigger and fewer mushrooms. The longer you wait the more but smaller. Espero que este es claro si no me avisas.

    The spawn is mycelium on either sawdust or sugarcane. With two bags of grain spawn for supplementation. I personally haven't used straw or shavings with this method on Shiitake but bet it would work cane is s bit more woody so it will have a bit more umf than straw but I believe its possible. With shavings yiu need to watch on having too much air space.

    Yes a few days to colonize. I'd say if you did oysters like this you could initiate them shortly after but with shiitake while they colonized the block in a few days, then they have to go through the blistering process and a little browning before I initiate to fruit.

    How much sugar can and where do you get it? I’ve been using my own from my years I it twice with a cheap mulcher then I dry it out till I’m ready to pasteurize

    I just would go fresh. Now I"m back to my supply with the waste from sugar plant. I would love to have my own though and get the sugar cane juice. I have a hook up with a local sugar mill and buy two tons at a time which lasts a bit.

    So, I'm new to this. Question; why isnt there a high likelyhood of contamination when after pasteurization...the substrate goes on the large table in an open air room, and not a sterile clean room exactly? Does it have to do with the difference between pasteurizing vs sterilizing?

    when you pasteurize you leave a large number of bacteria alive which makes it harder for competing bacteria to take hold, but because you are adding a nice amount of healthy spawn the mycelium is able to take over easily before any new competing bacteria can become dominant. The pasteurization process selects for good bacteria that may even support mycelial growth. you have to remember that mycelium normally grows in places where it must share nutrients with other microbes. the only time its really important to be sterile is during grain inoculation.

    Yeah Jared nailed it. I have sterilized substrate and tried to do something similar in open air and it contaminate quickly because of the lack of "good" bacteria, it gives too much of a clean slate. Not all mushrooms can be grown with pasteurization, usually its more aggressive mushrooms like Oysters. I am getting away with it because I'm putting so much spawn in and find that the sawdust spawn is really the trick as it is finer particles and I can get it to spread more, making it so the mycelium has to spread very little space to take the whole block.     If you seal the bag , there will be moisture inside, does it affect mycelium growth??

    no you want some moisture. The mixing especially when hot helps things steam off and we drain out water both in basket and once it hits table it flows out to not be over saturated. They are definitely heavier than sterilized blocks. A bit more water content but its good. There is a big range there that works.

    Sounds like you're ready to roll. I haven't done Shiitake on straw but I believe you can. Start with small batches and record a lot as Shiitake are super finicky with nitrogen levels. I gotta run but will leave more on topic in a. sec.

    Sorry I had a meeting to get to. Not sure if your planning on doing Oyster or Shiitake. Straw is tried and true on Oyster but shiitake less so.     Unicorn or Stamets for spawn bags. For pasteurizing bags I recycle spawn bags or really any bag has worked and I either use 3M microporous tape or cotton balls stuffed in top for filter. I have designs for future reusable containers.

    Yes, although the issue would be. One way I get it to work is to get a really high ratio of spawn so it colonizes quick. If you tried to do it all with grain your nitrogen levels would be too high and shiitake doesn't like that. So they'd not fruit or get real weird and mututaty, should be a word spell check, so really it's a combo of sawdust spawn and grain spawn that has yielded me success but I bet you could get it to work. Have you tried? Success? Oyster on the other hand, grain spawn away.

    @@5DLifestyles it's been like dream to star my own shiitake farm and when i saw you using sugar cane i was so happy because it's ver cheap and available in my country am going to use 10-15% spawn rate and i hope it works , do you have any idea what is the perfect spawn rate? i really appreciate your help god bless you and your beautiful family

    Sugar Cane bagazo, cross between straw and wood chips. No but I"m gearing up to get into the lime pasteurization. Have you done it?

    @@5DLifestyles I think the lime would work with oysters but other species are set back by the high PH. it might be worth experimenting using high PH on agar plates to get the mycelium adjusted to a high PH environment.

    I used two blocks of grain spawn for all that substrate. Shiitake is so picky on nitrogen levels so you really have to factor in how much nitrogen is in your spawn blocks as well. Your trying to hit between 10-20% of end mix. I've def gone to high and two low over years. So key to keep notes and what's you find the perfect mix stick to it.

    I should know for sure, kind of embarrassing to admit but I stopped recording strain. It is strain I got from Stamet’s course. I believe it’s called SJ-1.

    Hello, so I believe you wondering ratio. I'm not sure KG, that tank is about 55 gallons, probably a hair bigger. I usually get 30 "blocks" out of this tank. And I use 6 spawn blocks, so roughly your looking at 1block spawn to 5-6blocks worth of substrate, its a very high rate. I think you could do it at 1 to 7.5 I just haven't done it yet I am to scared. If your using Oyster spawn you can get a way with a 1spawn to 10final substrate ratio, you really could probably do even less of ratio if you wanted. Oyster is much more aggressive than shiitake. I hope this helps.

    I will do more videos for sure on this subject. I use primarily Sugarcane as my substrate you just need to supplement with something with nitrogen. Usually people use bran. I am currently experimenting with using other plant sources, green branches and leaves, I want to grow beans for that reason...

    Here is a little cheat sheet of my mix. Play with it. I use sugarcane bagazo not hardwood cause its a material that I can get. Obviously its all heated with water so that weight is not included but with a little math could be figured out. My spawn blocks are made up of Sugarcane and bran, bran is at about a 20% ratio in spawn blocks. I am pretty sure I mentioned it but unlike Oyster you can put too much nitrogen supplementation. Just play with it, I'll be curious if hard wood works in pasteurized form. 4 tubs cane (55lbs dry weight, sugar cane) 1 6oz cal sulf 26 lbs wet weight spawn (Bagazo/bran spawn blocks) (I've done less, 20lbs will work). 14 lbs grain spawn (can go up into 20lb range, just play with it) 226.75 lbs final weight on 32blocks
