Wow. This might be the different and best pasta preparation recipe available on internet that I found. Loved the way how you described the method and it's reason for each steps. Would have been nice if you made the bow tie shaped pasta also from scratch.

Chef.. I had a query.. I got encountered with another videos of pasta making where while boiling the pasta the video informed that because of water and oil don't mix up together, it's a myth of drizzling a dash of oil into the water resulting in not affecting the pasta at all.. @kunalkapur Request you to help with the query..

ofcourse they dont mix together but oil certainly coats on to the pasta and hence it is added, A light coat helps to keep the pasta separate and not too sticky.

Use Ghee instead of oil that would do better
